As of now, I've got my eye out on this 30" tempered glass gas cooktop by Empava just because it seems like it would make cleaning easier but my husband doesn't feel so confident since the brand isn't well known

Kinda does but I know my husband does have his eyes on Wolf appliances so he'll love that you suggested it.
Wolf gives me the "expensive for no reason, but to say I'm rich" vibes but if you actually like using it for cooking then that's definitely useful!

I’ve got a full suite of Gaggenau appliances—two built-in ovens, a built-in coffee machine, a wine fridge, and a gas cooktop. Hands down, they’re the best appliances I’ve ever used. That said, the gas cooktop is driving me nuts.
The burners are this polished brass color that turns a blackish-brown after just a week of regular use. Performance-wise, it’s flawless—amazing heat control and precision—but I can’t stand how quickly the brass discolors and ends up looking grimy, no matter how well I clean it.
I’m considering swapping it out for something like a Wolf cooktop or another high-end option without brass hobs. For anyone else who loves to cook and cares about both performance and aesthetics, what would you say is the absolute best gas cooktop out there?

What you want is Bluestar with open burners.
If you don't like brass burners, you'll have to go with aluminum burners. Brass is pretty much better in every way except it will patina. Aluminum, when used a lot will warp eventually (although it will take a long time). There are brands where for this reason, provide black porcelain burner caps.
I like brass, just not liking the way they wear with time. Any recommendations on what else I should consider?
You can try polishing them from time to time,
I think at this point you just need to fork out the money to have your cleaner polish your brass…

Not as far as I can see. They both have the exact same burners in the exact same locations. Both have ez lift grates. Simmer burner. High BTU burner.
I sold appliances years ago and whirlpool makes a very good burner system,,, unless you go high-end like wolf or Viking, they’re all about the same,,, I’ll keep in mind if you live in California they will be banned in a few years, forcing everybody to get electric or induction,,, you should look into induction anyway they’re not cheap, but they use far less power than either gas or electric and cook in about a third of the time New York

My kitchen top is dark marble and i believe a black glass cooktop is a better idea, i have space to place a 4 or 5 burner without issue.
Does it have to be gas? Induction is the way to go. Its safer, faster, and gives you far more control.

The most important when buying gasstoves, is to be sure to get at least one really powerful big burner for searing, especially important if you want to make wok cooking!

Hi, Our 36 inch frigidaire has bit the dust and we need a new 36 inch gas cooktop. I would not buy the frigidaire again as the knobs break ALL the time. Any recommendations for a 36 inch gas cooktop?
Unless you want to spend a lot more on something like a Wolf or Thermador you're probably going to continue to get lousy knobs. I've found you can often take the part number for your knob and get a set of identical knobs on Amazon for less than the price of one official OEM knob.
gotcha. Yea our stove broke because now the knob part won't budge and we had to turn off the gas. We have to replace the knobs almost every month...

I noticed from your other posts that the concern is the heat provided for Indian cooking on Induction.
The temperature on a decent induction cooktops such as Bosch/Siemens can give you consistent temperature to the cookware up to 220°C and can be set to other lower settings using “PerfectFry” which is basically sensors under the glass reading the temperature of your cookware through the glass.
When comparing gas cooktops, the actual burners that give you the power/performance are commonly sourced by the major brands from the same gas burner / jet manufactures in Italy called DEFENDI or SABAF which you can see branded on the actual burners.
This is why most major brands will have a similar max output on the largest burner, which in the UK this is often advertised in KW and usually maxes out at around 4-5KW or 13-17,000BTU. https://imgur.com/a/gMip3Tn
Depending on the size of the cooktop and your budget, you can get into higher spec brands with higher out put if that is the goal.
The main concern I would have is that you might be trying to get really high “wok style” heat which can’t be achieved with normal indoor home appliances compared to commercial grade or outdoor options as there are regulations that limit how much output a gas cooktop provide in a residential home.
This is where it is best to have an area outdoor setup of an inexpensive wok burner that will give you intense heat and the performance that some people want to achieve, I have a friends that do heaps of asian style cooking and this is the only way to achieve the results. Example below of a 12KW or 40,000BTU burner.

Thank you so much. Yes, my concern is mainly about low-heat/simmering tasks like heating milk for my South Indian filter coffee, making Indian tea, boiling milk, and preparing dosa on a large pan. I really want to switch to induction, especially since I have a small utility/wet kitchen where my gas hob is. But I’m worried that if the induction cooktop can’t handle these tasks well, my main kitchen won’t be as functional as I’d like it to be. This is why I am now checking the options for gas only/ modular setup
I found temperature control to be much easier to achieve on induction than on gas. Low-powered simmering may not even be possible on a gas stove as the lowest level you can turn the knob to may be too much already.
We switched from a Miele induction top to a Blue Star gas range. Zero regrets. Just couldn't get used to the heat control on the Miele and the open burners and overall simplicity of the Blue Star is awesome.
My family and I are looking into getting a new oven ours started to act up and it can't be repaired anymore. Looking for something that's great with baking for sure. If it has a quick boil burner that's a plus.

There are very few residential grade gas ovens for sale. OP likely did not mean gas ovens, just gas cooktop.
I have a gas Bluestar and I love it. I got it because I was able to test one- my friends have one- and I loved how powerful the high burner is (it's the 30 inch with four burners, one is extra powerful so your 'quick boil', and one is a simmer/low setting one) and how well the oven heats- even and quick.
I very much prefer a gas cooktop, just not ovens.
Electric ovens are much better than gas. They cook far more evenly and heat up faster. What you want, most likely, is a dual fuel range. Gas cooktop, electric oven.
What's best depends on your budget and what size you're looking at. At the top end, Miele, Thermador and Bluestar are probably the top 3 (have heard not so good things about Wolf lately, but if you like them, throw that in).
One way to stabilize the temperature in your gas oven from opening and closing. The door is to put high temperature ceramic tiles on the very bottom rack. This will help keep the heat really regulated inside of the oven.
Duel fuel is the way to go. Have a gas cooktop and electric convection oven. Oven is awesome and love the gas cooktop for even cooking. (being able to use it when power goes out is also a huge plus)

Quick-boil burner? You are describing a range, not an oven. I can afford any range on the market. I chose a 60" Thermador dual-fuel commercial depth range. Gas up top. Electric steam ovens. (Gas is NOT even and therefore not the best solution for baking.) It has two oven compartments -- one small, one large. So I can choose the size to the amount of baking I am doing. Usually the small one is sufficient.
There are very few parts to this range. And they're interchangeable with every Thermador range ever made. So repairs probably won't be necessary. And if they are, they can be done by the owner in a matter of minutes. (Assuming the owner can move the thing. Mine weighs 600 pounds.)
I loved everything about the 60" Thermador but couldn't get past the nonstick griddle. We are going 48" Miele instead with a separate steam oven.
Don't you just need non aluminum pans? So cast iron and stainless steel work fine?
Have you needed to replace any parts on it? I've heard about people having issues with the oven thermostat, convection fan, and igniters.

Be warned these puppies are seriously heavy and have to be cared for. Even though they are pre-seasoned all these new cast iron things can take time and care to get actually seasoned. They can be kind of a pain until they do. Most stuff will stick.

a decent cast iron reversible griddle/grill will last a long, long time stick with lodge or some other well known brand wont regret it (two burner coverage gives a large cooking serfuce, if you want single burner your better off with a cast iron grill pan
