I'm not sure what it's called but a local taqueria has a salad made of sliced cucumbers, diced hot peppers, shrimp, and lime juice that my dad loved. He recreated it without shrimp because I'm a vegetarian and it was really tasty, lots of flavors going on. Would be a good side, I think.

Edit: asked and answered! While many of you gave great suggestions, a few I'm embarrassed to say I didn't think of, I've been convinced that tacos(and all the toppings) are themselves a complete meal!

My Google search pulled a list from Delish and they Literally listed salsa and tortillas as a side dish for tacos. This makes my eye twitch. Salsa and tortillas are condiments and eating utensils where I'm from.

Making dinner for 6 guys and thanks to all of your suggestions, will be making carnitas tacos. Planning on having pickled red onions and guacamole and chips.
It will be in the backyard, served at a table, pretty casual. I have access to stove/oven, bbq, sous vide. Would prefer to be able to make most of it in advance so I enjoy the time with friends.

This is awesome! I like to soak the minced garlic in the lime juice for a bit before adding to the recipe, otherwise there’s a chance for some unnecessary heat from the raw garlic.

The serious eats Frijoles Charros is fantastic, I use canned beans usually and still comes out really good but just have to reduce the total liquid by half like it says in the story part of the recipe.

They are so good! Have been times after I’ve made them that I don’t event bother with the leftovers of whatever “main” I made the Frijoles Charros for and just have a bowl of the beans as a meal instead lol.
Substitute beer for a good chunk of the chicken stock and you’ll get borracho beans.

A cilantro-lime slaw like this one goes well. A bit of oil instead of the sour cream and mayo are also fine to me, but I love things to be quite acidic.

I want to work on incorporating more veggies into our diet and need some ideas for veggie sides that fit meals I already make like enchiladas, white chicken chili, tacos, burritos that type of thing. I have a toddler so we can’t do anything spicy right now. Thank you in advance!!
Edit: I know that extra veggies aren’t traditional but we are trying to get our toddler as well as all of my family in the habit of eating more veggies with our meals. We also really like veggies. My favorite cabbage slaw in mexico the cook told me just shredded cabbage, mix with salt and let sit an hour. Drain. Add s lot of fresh lime juice, cilantro , scallions , dribble of neutral oil. Done. I wanted to eat vats of the stuff
I was going to suggest curtido which is essentially the same thing... I'm perfectly happy to eat a bowl of it on it's own. Sometimes I add a bit of cauliflower to the cabbage & carrots. Anytime I'm cooking "south of the border" I make a giant batch.
In Mexico we had iceberg lettuce, onion, cucumber salad dressed with a squeeze of lime and salt.
We normally just do a quick tossed salad with whatever vegetables we have on hand.

Also, I’ve definitely seen both enchiladas and tacos made with veggie fillings like nopales or calabaza flower included. Also, mushrooms is used in some dishes. But lots of Mexican food the salsa is a big part of the veggies. Just because it’s eaten with chips/tostadas or blended doesn’t make the veggie part go away 😁

I’m pretty big on “it doesn’t need to match”. Like, if you go to a potluck, do you care that all of the food on your plate is random? For most people, the answer is no. Just eat whatever veggies you want to as a side. Asparagus doesn’t necessarily “go” with Mexican food, but asparagus is delicious so I’d eat it with my enchiladas any day. Broccoli, Brussels, zucchini, etc. just eat the veggies you want to eat
Totally agree! A little garlic and cumin and lime can also give literally any veg a compatible flavor profile. There aren’t rules. 😊

Never had them seasoned before in a taqueria, so never thought to try that myself. I learned to view them somewhat of a palette cleanser if the salsa was a bit spicy or too liberally applied, which to be honest, the later is likely always the case for me.

I've been improving my cooking over the past year with different types and cuts of meat, different marinades, seasonings, way of cooking ect. But I seem stuck on veggie side dishes, usually its basic frozen corn, carrots, broccoli, green beans, zucchini, summer squash that are all boiled or steamed, occasionally I roast the carrots in the oven or try sauteing the zucchini and topping with some parmesan cheese, but they always seem like an after thought. Open to all suggestions on how I can improve them and make them a better side, or even main dish!
Roasted brussels sprouts are my go to halve them, toss with olive oil, salt, balsamic glaze and roast at 425°F until crispy. Add bacon if you're feeling fancy. Honestly veggies need the same treatment as meat proper seasoning and cooking method makes all the difference. Ditch the boiling when possible
I do sheet pan veggies constantly broccoli, cauliflower, whatever with olive oil, garlic powder, smoked paprika, salt and pepper at high heat. The charred bits are everything. Also, don't sleep on sweet potatoes cubed and roasted with a bit of maple syrup and cayenne for that sweet/spicy vibe. For summer, grilled asparagus with lemon and parmesan takes like 5 minutes but tastes restaurant level good

I do carrots in butter, honey and brown sugar and they taste like candy. You choose the amounts. It’s the same but different every time.
I also recently did peas and carrots in browned butter with garlic and my stepson had TWO servings.
I surf Pinterest and save veggie recipes and periodically will do a meat free night and use it to just experiment with new veggie dishes and the wins go into dinner rotation.

Sautee in butter with salt and pepper. When about half cooked, throw in some fresh minced garlic to liking. When almost completely cooked, add some more butter and add cinnamon and just enough brown sugar to let you know it's there.

I use frozen baby Lima beans, leftover tomato candy (which I make for pasta), sautéed onions and garlic (not traditional but it’s better). I use so much butter. If I’m feeling really indulgent I also add bacon. Serve with cornbread as a vegetarian main or with fried chicken or bbq ribs as a side.
