Understanding Third Wave Coffee
Third wave coffee focuses on high-quality beans, direct trade, and specialized brewing methods [5:1]. It represents a movement towards treating coffee as a craft rather than a commodity, emphasizing the unique flavors and origins of each bean.
[removed]
I’ve struggled to find my favorite pour over in SD and usually prefer my own. My favorites are Rikka Fika (East Village), Zumbar (Sorrento Valley), Provecho! (Barrio Logan), and Jaunt (Miramar).
Have you tried mnemonic?
I've had some really good pour overs there.
Zumbar is excellent
Lofty coffee, James coffee, heartworks, little joy, if you’re ever in San Clemente or laguna, Rapport coffee roasters are incredible
What is third wave coffee?
Third wave referred to the higher end coffee shops that popped up in the 80s and 90s that were boutique and better than the second wave shops like Starbucks and Pete’s that were an improvement on the shitty Italian import coffee served in America for most of the 19th and 20th centuries.
It’s kind of dated now but some people still use the term to describe high end coffee shops.
Third-wave coffee is associated with the concept of specialty coffee, referring either to specialty grades of green (raw and unroasted) coffee beans (distinct from commercial grade coffee), or specialty coffee beverages of high quality and craft.
This is the most succinct paragraph from Wikipedia. There's more to it, but this give you the idea.
You can’t describe third without giving us context from first at second….. I’m too lazy to do research because I haven’t had coffee yet, but if I were to guess, first wave will be Folgers, second wave will be Starbucks, third wave will be where we are now.
Sounds very hipster-y
Oh hipster BS. Cool
That's what I was wondering. Coffee while you listen to thrid wave ska? Someone educate me.
Do yourself a favor and go to Acento. The most underrated coffee shop with the best assortment of beans he roasts himself at location
The owner actually roasts beans for multiple shops in the area too. Though I think since moving to new spot he didn't need to anymore.
Want to buy some good beans for my espresso machine
IMO beacon is the best roaster in Ventura county. The owner Jon is a master roaster who is able to pull flavors out of a roast which you wouldn't think would be there. Prospect to me is all hype and the coffee isn't particularly well roasted. Go in to beacon and ask questions, they love to talk coffee.
Awesome rec thanks!
What is third wave
Basically really high quality beans. You need really good beans to pull a quality espresso. Nothing worse than a bad espresso
If you go to Santa Barbara, I really love Handlebar Coffee Shop 😋
Noted! I use a french press and I will say that although prospect is my favorite, their beans made me shit my pants.
Then what’s second wave?
What does third wave mean?
Beacon espresso whole beans 🥵
Beacon, Prospect, Singing Sun, Palm & Boy, Humblemaker..
Interesting
Hey guys. I'm going to California this month and was interested in hitting up a few coffee shops along the way. I'm visiting the San Diego area for a few days then going up to San Francisco area for a few days. Any favorites? Any unique shops? Any suggestions would be great! Thanks!
Another vote for Modern Times in SD. Verve is based out of Santa Cruz, as is Cat and Cloud (both excellent options). Whenever I'm in SF, I make a point to stop in at Philz as well. If you're in the south bay, Chromatic is a great choice. Blue Bottle is also a Bay Area staple, but interest in them seems to have dwindled since the Nestle acquisition.
If you are going to Chromatic it's also worth heading down the street to Voyager. They carry other roaster's coffee but know how to prepare it well.
I’ve heard great things about Hawthorne and James from a friend who went to San Diego last year.
For SF, I adore Sightglass and stop by every time I’m in the city, and I’ve heard nothing but wonderful things about Andytown though I’ve yet to have the opportunity to go. I used to stop by Four Barrel’s shops (including The Mill) whenever I could, but I’ve kept my distance with the harassment news.
Live in SF and love Sightglass and Andytown. Andytown is a short walk to the beach too, which is nice! Lines get long though.
Saint Frank in SF is really good and also close to a bunch of other tourist things so it would be convenient if you are exploring the city. I bought a bag of beans for them and they took the time to let me taste samples before I bought which I really appreciated. Wrecking Ball is also supposed to be good but I haven’t been there yet.
Another good place is Snowbird - and there’s lots to see close to it as well as it’s right near golden gate park.
Hawthorne serves Cat & Cloud which is all around awesome. Dark Horse is worth a stop in SD too.
I second sightglass. It’s got a great setup and excellent coffee.
So far Sightglass and andytown has been a few of the top recommended places in SF. I'm going to put them on my list. Thank you!
Modern times is a brewery turned coffee shop (and still brewery) in San Diego. Their beer is very good and the coffee is a very pleasant surprise.
IIRC, they wanted to cut costs on making their coffee stout, so they started roasting their own coffee. Found they could make great coffee and started roasting their own beans.
Do they have dairy at the one in SD? Went to the location in DTLA for beer (IMO it’s the best beer I’ve ever had) and wanted a coffee, no dairy...
I'm a fan of bird rock in San diego.
Be sure to get some California burritos while in SD
I just did a California road trip and hit a lot of coffee shops. My favorite of the whole trip was Dark Horse in San Diego. If you are into fruit bombs they have a Fruit Party blend that will blow you away, I regret not getting a bag.
In LA, Lab coffee roasters was great, and has parking.
My favorite of San Fran was Four Barrel Coffee. Ritual was great too.
It is also worth stopping at a Blue Bottle if you don't have them where you are from.
So many great places in California.
> If you are into fruit bombs they have a Fruit Party blend that will blow you away, I regret not getting a bag.
Hey fellow espresso nerds.
Curious if folks have recommendations for your favorite third wave coffee spots in Costa Mesa / Newport / Laguna? Will be visiting that area for a week, and would like to check out some cool spots. Thanks!
Succulent Coffee Roasters is the best in South OC, I'm surprised it doesn't get much recognition. Them and Moon Goat are our best roasters in OC.
I’ll pick up a bag next time I’m down there! Any recs?
They have rotating micro lots or graded beans often, I enjoyed Bali Kintami and Guatemala La Kolina. I usually try the ones graded by Coffee Review. They're quite amazing value. Kintami was really good at 89C 1:2 in 25-30 seconds from first drop for my taste.
Try looking up Freelance, Vacancy, and Kean. Enjoy your time here!
Thank you!
Actually one more. Not really an espresso place but they're a roaster that came from Osaka, Japan. Called Mameya Coffee Roasters. It's in Aliso Viejo, a little away from Laguna. If you have the time, it's totally worth it IMO. They only do pour overs and cold brew but really fantastic. Their main thing is roasting beans on the spot for you with a big variety of beans to choose from
Moongoat is up there, I really like their roasts and their location on Placentia is really nice
Stereoscope has a small location - not my favorite setting because its a weird business building and you need to pay for parking in the structure if you stay longer than 15min, but worth a look
Portola is pretty good also
Stereoscope is good but the price is obscene. I prefer Kean.
yeah Kean is OG. haven't had a bag from them in a while
my favorite 'budget' spot is Wilsons on Placentia. small roastery that does 1lb for ~16-18$
Newport - Freelance, Vacancy, Stereoscope, Daydream, Kit, Huskins
CM - WIP, Portola, Neat
Laguna - Equator, Endless quest
this gets asked a lot on the r/orangecounty sub too so you might be able to find some other recommendations on there as well
KIT Coffee, Huskins, Stereoscope, Vacancy, Herst
you're probably right... only been there once but forgot about validation
I like Verve, Onyx, Counter Culture, and Tandem Coffee. I don't think you can go wrong with any of these.
What's your favorite from counter I haven't tried them?
Hologram definitely. It's pretty popular blend. It tasted like blueberries and chocolate.
Counter Culture has been my favorite coffee this year. They also have a great subscription service.
Every time this comes up, I second a Counter Culture subscription. Especially their two bag subscription. The main reasons are
the price per bag is somehow a few dollars cheaper than the other roasters mentioned here; less than 17 dollar a bag (Intelligentsia is above 20, Sumptown is above 20, Verve is 20(?), Onyx is above 20.
variation each shipment. Counter Culture hardly ever repeats bags (which I like), whereas other subscriptions (Intelligentsia comes to mind) have a rotation of 6-10 single origins they send. Though, when you find a bag you love, write down the name so you can order it in the future.
Verve is very very commercialized, please choose small local roasters.
Verve is still an independent company, unlike Stumptown, Blue Bottle, and Intelligentsia. Do you just mean they’re relatively large and successful?
That seems like an odd reason to penalize them, especially since their quality is still excellent and substantial volume is what every roaster aspires to.
Excellent suggestions. I think Onyx is the best in the country right now. Love the other two as well.
Really? I live in Fayetteville, AR, where Onyx is based, and I've never even been, and definitely didn't know they were so well known! I've been going to the same mom & pop roaster here for 10 years, so I might need to change it up. Any suggestions?
What does third wave mean?
So when people post these things do we just assume they are in the US?
3rd wave is a coffee movement based on making coffee a specialty thing, focusing on direct trade, light roasts and fancy brewing methods.
Toby's Estate for the win! The owner has his own farm in Panama. Once you experienced Toby's, SB will loose its magic. Lols.
I thought Toby’s Estate borders on the second wave since it started in Australia and has branches in some select international cities
Third wave is about the origin of the beans. It is not about the number of branches. The coffee academics is also third wave since they use single origin beans.
Another 3rd wave shop na highly recommended is Blue wave in Estancia & Firefly in QC.
What's a third wave coffee shop
Hmmm basically third wave coffee shop primarily focus on the quality of the beans, including the origin, the roasting, the taste notes, brewing techniques etc. It promise to provide a better coffee experience. For comparison first wave focuses on the 'commodity aspect' of coffee so this is the mass production of coffee for easy access like the ones made by Nescafe, Folgers etc. Second wave refers naman to the rise of big coffee chain shop like starbucks.
Following up. Salamat sa sasagot.
Woke Coffee in Valenzuela. The ambiance is nice as well, since it's also a flower shop/studio.
Interesting. Kaya lang di ako nakakapunta dun hehe
Niseko Coffee, Crema and Cream are the top-tier for me. Chapter coffee is also nice.
Fat Seed is a hit or miss for me.
I vouch for Toby's Estate, Angkan, Elephant Grounds and Bakehouse MNL (malakas wifi 😂😂 plus their flat white and pastries are so good) 😍
All of these naman are located in BGC. Hope you have a great time once you get to try it. 🥹☺️
I'm looking for places that focus on a lighter roast profile often associated with the Third Wave coffee movement. Do any exist in the Mammoth Lakes area? Google suggested Black Velvet Coffee Roasters. Looking at their menu it isn't immediately obvious they fit this style, but they might be the closest option.
Black Velvet will likely have a few single origin light and medium roast options. In my experience they’re the best coffee in Mammoth.
Black Sheep in Bishop gets a pretty good single origin roast going once in a while as well.
These are small towns, without many coffee snobs to support $10 pour overs being profitable, so manage your expectations.
Yeah, I get that. I was thinking more like specialty roasts as filter coffee or espresso pulls, not NYC or SF pour overs.
Sounds like you might have to bring your set up with you.
Black velvet has good espresso (dirty chai is my favorite), and they make their own cold brew, but I think what you’re looking for is on another level.
Not just your closest option, your only option. Black velvet is good, well roasted coffee. Everywhere else in town is just meh IMO. Unfortunately coffee shops along with most other businesses in this town cater to the tourist who is on vacation and just looking for a quick fix. You won’t find anywhere that specializes in anything deeper than making a quick buck.
Great, thanks for the insight. Judging from the upvote/downvote ratio of my post, there might not be much of a demand for specialty coffee in the area. Appreciate the vote of confidence in Black Velvet. We'll try it out.
Black Velvet is great.
Born and raised in mammoth, black velvet is your best option. If you compared black velvet coffee to something you could find in a major city like LA or SF, it’s gonna be a solid 6-7 out of 10 in terms of their pour overs and lattes. In a small town after a full day of skiing? Their coffee is the best in town and a 10/10 in any form.
Tried Black Velvet when I was in town recently. They had one coffee on pourover, a Costa Rica single origin. The barista was not able to give me any information about it (roast level, flavor notes, processing). I went for it. Their pourover setup does not include the use of scales so unclear how they are measuring the water ratio. The pourover was fine, a bit of nice acidity, certainly better than generic starbucks or whatever, though it had a bit of a papery note to it.
Also I should note, at 8000 feet above sea level, water boils at 197 so that limits how light of a roast can be brewed successfully up there.
Didn't try their espresso drinks.
I worked briefly at a coffee shop in Mammoth, and had to explane the elevation/temp issue a bunch to folks. Appreciate that you point that out here.
Just got a pour over at Black Velvet; it’s just meh. Only a single choice of coffee for pour over. They didn’t use a scale. They didn’t use a timer.
I'll be visiting SF next week and am looking for places that serve ultra modern specialty coffee. I prefer coffee closer to the light/ultralight/nordic light side of things so I'm not interested in any of the early third wave spots like Sightglass/Ritual/etc. I keep hearing about Coffee Movement and have plans to visit there but I am looking for a few more. I'd also love to know any spots in the city where I can buy local roasters like Hydrangea, Flower Child, Moonwake, minmax. I heard I can get some of them at CoRo but I'm not sure I'll have enough time to get across the Bay so I'd like to avoid that if possible.
Coro does pourovers on weekdays but their batch drip coffee has never disappointed me. you’re going to want to have a budget in mind for bags of coffee you’re going to want to buy.
Coffee movement is great and they do pour over flights which is fun.
Last but not least, they don’t do pourovers but Golden Goat is the literal goat for me in SF, they have close to no seating but they’re really close to a chill park. I’ve also never had a problem getting a spot in the limited seating in front of the shop. It’s a neighborhood spot people pick up and go. They’ve got their espresso game on lock, also their drip coffee also never did me wrong. They often carry Flowerchild but no promises, they rotate regularly.
Are you sure? I’ve been to both Coffee Movement locations and CoRo in the last couple months—all on weekdays—and none of them were offering pourovers (even when I asked)
I have been to the Richmond Coffee Movement location and they definitely do pourovers. They charge extra, but it is 100% offered as "Slow Drip"
I guess I could be wrong, I moved away from the bay 5 months ago. I know Coro was unreliable for offering pourovers on a consistent basis but I was pretty sure pourovers were a staple at coffee movement. Was this at both locations?
Golden Goat does pour overs if it isn’t crazy busy! Usually great bean selection. That said, the normal drip is really good
I thought maybe they did but I wasn’t sure. Forgot to mention they bring in a rotating cast of baked goods that absolutely kill the game. Seriously I can not emphasize enough how great that little shop is.
Coffee movement for sure. Had their DAK recently and it was amazing. The one in the Richmond has seating.
Pay homage to the OGs at ritual and four barrel that kicked off 3rd wave coffee in sf and most of the world by and large.
Coffee Movement and Saint Frank are the best imo. Enjoy!
Just visited Coffee Movement on Sunday while in the Richmond District. Barista was using a Pulsar brewer. Coffee was delicious. Also picked up a bag of Dak Banana Split.
Well worth the trip out to the avenues.
Coffee Movement was my first vote too!
If you are going to go South of the Bay Area.
I might get a lot of hate, but Moonwake in San Jose is comparable to Japan's Glitch coffee.
Staying in Solano Beach next week and looking for recommendations for local roasters to buy beans. Not looking for co-ferement but open to washed, honey or natural.
I see Achilles Coffee is very close to where we are staying, any feedback or other recommendations?
Thanks!
EDIT: Solana Beach not Solano.
I've loved the steady state that I've had, and I've also had some really nice cups in store at Bird Rock, there's one in Torrey pines not too far from Solana
Did you mean Solana?
Whoops yes! Solana, thanks! Not sure why I typed Solano
Ok, cool. Just wanted to check!
20 min drive but Steady State in Carlsbad is best in the area.
Go north and try Rosehill in Cardiff. Further north has steady state. I’d avoid iron smith personally. Lofty coffee is okay. Interim coffee is also rad.
Close to Bird Rock in La Jolla and Encinitas!
These are a bit further north than you but highly recommend checking out necessity coffee in Encinitas! They're doing some really cool stuff with their drinks.
Steady state in Carlsbad is a great roaster too with tons of options to pick from.
Went to Moonwake in San Jose California and I was absolutely blown away. Apparently the shop is only a few months old and it was clearly made specifically for high end coffee. They told me the water is triple reverse osmosis or something lol and they make sure the mineral content is perfect. They were slammed and the gentleman doing the pour over still was chatting up making sure the pour over was perfect. All the questions I asked, had detailed answers, really cared, felt welcome there! He made the pour overs but didn’t give the note cards until after, he had me guess the notes. Amazing experience! The coffee on the left was awesome, basically identical to the notes (floral and amazing) the coffee on the right was completely different. Phenomenal cranberry flavor but not “boozy” very unique coffee! If you’re ever in San Jose definitely check it out!
Whoa, somehow I never knew this was 15min down the road. Thanks for posting! I feel kinda dumb b/c I’d kinda given up on South Bay roasters—some are fine, but hadn’t (yet) found any to be standout and consistent enough for me to go out of my way to vs buying online w/ free shipping. Will try tomorrow!
Chromatic coffee has been pretty good for me as well but tbf that was espresso based
Yeah, I used to like their espresso beans when I was running my Silvia years back. Also Dana street roasters in my mtn view
You should also try hydrangea, roaster out of Berkeley. Both Moonwake and Hydrangea are my favorite roasters out of the bay area!
Yep — both Hydrangea and Flowerchild are high up on my list for 2025. I didn’t get to try Moonwake today, but excited to since they’re a short drive away.
I've been ordering their coffee for a while. (From MN) I've never been disappointed. That Pepe Jijon was one of my favorite coffees this year. I've had over 30 Pepe coffees, and some of the best were roasted by Moonwake. Happy to hear their cafe is doing great
Hey, I work here. Y'all really made the owners' week with all the excitement about the shop and our coffee. Lots of exciting coffees and working on new cafe experiences to come in 2025 :)
Nice try Brian Quan
What’s his story? Looked him up and looks like he owns xbloom and maybe Moonwake also? Seems interesting!
You can check out some of their pov, how they transitioned from regular coffee market setup to a cybertruck into finally opening their own brick and mortar on his channel + some roasting insight in the recent vids. Seeing the growth was cool
lmaoooooooooo
they roast some gooood fuckin coffee.
