College student here. I would love some more breakfast ideas. I have a bad habit of sleeping in till the very last second, which doesn't leave a lot of time for me to actually prepare food for myself before work. I have access to both a fridge and freezer, as well as to most general kitchen appliances (microwave, toaster, airfryer, stove, etc.), but my go-to breakfast has been a slice of bread smeared with peanut butter. Does anyone have anonther easy, potentially more satisfying breakfast?
I like to make breakfast sandwich / burrito fillings ahead of time for fast meals. Just did some this week- i beat a bunch of eggs in a bowl, added in diced onions potatoes and minced bacon, poured the whole thing in a brownie tin and baked it. When it was done i cut it into squares (strips for burrito) and fridged them. Now i just have to heat and assemble which only takes a few moments.

For me, I like to just mix beans and rice(with spices to taste), and add whatever you want. Whether that's meat, veggies, etc. essentially anything that can go on a taco can go in it. You bake it in burrito form for X minutes if you make a dozen of them, and you have breakfasts for the next week and a half(Don't actually store these in the fridge longer than a week if you put veggies in them, onion will get gross by the 5-7 day mark). This recipe also works well with leftover barbeque chicken or canned chicken also works.
You can spice each burrito up differently, but they make for great grab-and-go choices if you wrap them in tin foil, and you can personalize them however you'd like.
I just make the whole burrito! Throw them in the fridge/freezer and then microwave or pan sear if I have time. I usually do eggs, a veggie (peppers, onions, spinach, potato, etc), cheese, and sometimes turkey bacon/sausage. Sometimes the tortilla is bit soggy if it’s microwaved, but if it’s pan it’s excellent!
If you don’t like the way eggs reheat (I think they get dry and kind of rubbery), scrambled tofu makes an excellent substitute!
Overnight oats! Basically, one part oats to one part liquid and whatever you like for flavoring. Mix the night before, stash in the fridge and stir in the morning. My kids like dried strawberries and add some mini chocolate chips in the morning.

I didn't buy a specialized ceramic microwave egg maker, but just use a small non plastic bowl (with a small diameter at the base) scramble the egg, cover with a lid or saucer & heat in microwave 1 minute. Add seasonings/cheese & I prefer a whole wheat english muffin.
Nothing is as good as scrambled eggs on the stovetop.

Nuts paired with fruit. It's amazing how filling this ends up being. My favorite is almonds with grapes or an apple. I find it's more economically friendly to purchase the nuts in one pound bags or in bulk and ration out my breakfast supply.
String cheese or sliced cheese and meat (if you're a meat eater). I like to use a reusable plastic sandwich container and I place sliced deli meats and cheeses within it. It's like a cheese board or charcuterie board but I can take it on-the-go.

I made a red lentil and chickpea coconut Dahl (Sunday of) last week and ate it for breakfast with rice all week. Topped it with some cottage cheese. It hit the spot.

You could call this a Nordic inspired breakfast. Smoked salmon, smoked trout, or roll mop herrings, with some sliced cucumber/peppers/rocket/watercress. Optional add on of cottage cheese/yogurt. Served on any form of dark rye bread or cracker. Fresh dill on top and pickles if you want to go to town. Absolutely delicious if you like this kind of thing!

So I know a few simple egg recipes you eat for breakfast but I wanted to know what other recipes you can cook with eggs for the morning. Asides from the usual omelettes, fried eggs, sunny side up eggs, etc.
What are your suggestions?
Hash! You can make it with anything. My favorite is cubed potatoes (or sometimes sweet potatoes), add sliced garlic near the end to just toast it up. Potatoes in the bowl/plate with grated cheese on top goes into the oven to melt while you fry up your egg to your liking. Finish with scallions and a few shakes of your favorite hot sauce.
Or do everything above but use grits/polenta instead of potatoes.
Toss on some crumbled bacon, sautéed spinach, sausage, whatever.
Sam The Cooking Guy's skillet breakfasts are my go-to template.
You can use what ingredients you prefer, whatever you have on have. There are no rules, but it comes out great every time.
Or similarly, a scramble of sliced up precooked sausage (or diced ham), leftover hash browns or tater tots, and onions (sometimes halved cherry tomatoes). Let those fry up in the pan for a bit with some butter, then drop in an egg or two and scramble it up. Probably can also be considered a hash, but enough people call it a scramble when I talk about it.
Strata. Whipped eggs, bread chunks bell peppers, onions, cheese, maybe some cream, maybe some bacon or ham… baked. So nice.
Great make ahead dish for a brunch especially.
I've never met a strata I didn't like. A great way to clean out the fridge but also feed you for a few mornings.
Shakshuka is great if you like tomato. Breakfast tacos are good and easy. Egg Bhurji is also good if you like Indian spices.

Try Shakshuka. Super simple..you need tomatoes, 1 capsicum, 1 onion and eggs. You can buy cottage cheese (not paneer)...like Chobani or something cheaper. It adds volume and protien + isn't calorie dense. Look up cottage cheese and spianch eggs. Great way to add spinach to your diet too

Take 4 eggs, some crumbled paneer (I use homemade, so it is crumbled), salt, pepper and two slices of bread.
Add some oil into the pan, heat and crack all eggs into the pan. Then add the crumbled paneer around the centre of the egg. Add salt, pepper of you like it. Wrap up the egg (like flip all the sides towards the center like a napkin so it almost fits the bread size), ensure the yellow part is still a bit gooey.
Then flip it.
Then toast the bread slices and just make a Sandwich.
Buy some dosa batter, make some chutney/sambar, and make egg dosa. Super easy and convenient, very yummy as well.
Try making Gyeran-mari, it’s essentially a rolled omelette side dish popular in Korea, I found it few weeks ago on YT, and have been preparing it atleast twice a week. The visuals and texture play makes it pretty appetising.

I know you very clearly said no eggs, but, if you are saying that because you don’t like the texture/taste of eggs I would recommend trying Ore-Ida Just Crack an Egg cups. I literally hate eggs so much, the smell and texture I can’t stand it. I tried these egg cups and there is bacon and potatoes and cheese and I’m so obsessed I eat them every morning now. It’s the only egg I consume. I can’t even taste the egg. They have different mix in’s and they are only 250~ calories prepared.

How do you keep them from turning into paste?
Soooo....I use an instant type from Trader Joes. If Im prepping for a week I use 5 packs and put them in my blender, then you can add your choice of fruit, strawberries, bananas and blueberries are what I use most frequently and I just blend and portion into my 5 jars. Mixture should be thick but pourable.
The hard part is you have to guess how moisture fruit is, for example if your banana is green and your strawberries are on the harder side then I would add a little extra water. But if your strawberries are ripe and juicy and your blueberries are ripe and juicy, I don’t add any water.
Overnight, the oats suck up the berry juice and our pleasant the next morning.

Oatmeal
I like overnight oats or chia pudding, top with fresh fruit. I use water and almond milk to make mine instead of milk I like the taste better. Sometimes I add a spoonful of Greek yoghurt for a bit of protein and calcium, to balance to meal a little. I usually go for berries, some banana and apple for the fruit.
I can make these the night before, so there is no prep in the morning. And the chia pudding will keep for a few days so I can make a big batch and it will do a few days. It means no excuses to skip breakfast.
Eggs have always been relatively cheap and a decent versatile breakfast. Right now my stores are crazy on egg prices and I cannot afford to buy them for my family of 4. My cheapest dozen eggs at Walmart is $4.96 but I regularly use like 60 a month.

I find that even one egg as part of a complete breakfast goes a long way. Cut a hole into toast and crack an egg into it on a skillet. Make a bowl full of rice and fry one over easy/ medium egg on top. Cheesy grits with some sautéed greens and/ or sweet potatoes with one fried egg on top of any component it super tasty and filling. Make egg muffins, one dozen eggs makes one dozen muffins and you can load them up with whatever meat, cheese and veggies you need to use up in your fridge; freeze them or keep in an airtight container for nearly a week. They reheat in a microwave about 15 seconds from fridge temp or about 30 from frozen; quick and easy on the go breakfast.
Having alternatives is great but also just knowing how to use one to complete a meal can make a huge difference in how long they last. Also consider getting a flat of eggs. If you know how many you go through you can get a really good bulk deal on multiple dozen if you have room for them in your fridge.
Or buy from local sources, if they aren’t cleaned you can keep them in a cool fry place at roughly room temp for much longer. Just be sure to float and clean them before you eat them.
I just saw that non-oatmeal breakfast thread, and it had a lot of responses but I'm allergic to eggs! I really struggle to find good breakfasts, since eggs seem to be almost universal in recipes.
Tofu scramble is really tasty, savory, and has plenty of protein! I season my crumbled tofu with tumeric, curry powder, garlic powder, paprika, mustard, soy sauce, and sriracha, let it marinate for a bit and then cook it up in the frying pan. Sometimes I'll sautee veggies first and then add the tofu.
I'm DEFINITELY going to try this. I developed my egg allergy late in life, and I definitely miss scrambled eggs!

Here to co-sign all the greek yogurt recommendations! I love cereal too and used to eat it a lot, but it was so carby and I'd be hungry again in an hour. The protein to calorie ratio on plain greek yogurt is UNREAL. I eat 3/4 cup to a cup every morning. Normally I'll add honey, banana, and a small bit of either pecans or bran cereal. It is SO delicious and very easy to change up by swapping toppings. It scratches the cereal itch to an extent and sticks around til lunch. ETA: and cinnamon! Add cinnamon! Makes it like banana bread.
Peanut butter and jelly is bomb for breakfast. Or Avocado toast, English muffins, yogurt with fruit, morning rounds.
Also there is no need to be stuck on the idea that breakfast has to be a traditional “breakfast” food. I love Trader Joe’s superfood burritos and bean and cheese burritos and would eat them for breakfast because they’re so quick. Turkey sandwich or a salad for breakfast works too.

Do you have a cast iron pan? I’ve had such better luck with hash in it than any other pan. Get it nice and hot before frying them taters and it ends up so crispy and great. I dice pretty small so it doesn’t take forever to cook through.
I mush mine up pretty thoroughly, so most of it touches seasoning. I also drain and press it really well beforehand. Adding sauteed veggies like onion and mushroom and peppers helps break up the tofu, too.
But I will concede that tofu always tastes a little bit like tofu. It's not a replacement for eggs, just a different thing that can be similiar!
I rarely have eggs for breakfast. This is my normal rotation:

- wheat bran with cinnamon, raisins, and sweetener

- instant grits with butter

I have been experimenting a bit trying to get extra energy into my busy system but I can’t seem to find a good range of healthy (not crazy healthy) breakfast ideas that aren’t just some form of fried, scrambled or poached eggs. Dont knock it till you have lentil curry for breakfast. Advacado on toast, tinned tomatos on toast, beans on toast - British delicacy. Any form of toast.
I like 10%mf plain Greek yogurt with fruit in it, usually bananas and a berry. Sometimes I throw a bit of raw honey in too. Very quick and fills me up
