Easy Breakfast Ideas Using Eggs

TL;DR

  • Try breakfast burritos, egg muffins, or shakshuka for quick and satisfying meals.
  • Prepare in advance to save time on busy mornings.

Breakfast Burritos and Sandwiches

Breakfast burritos are a versatile and easy option. You can prepare fillings ahead of time by beating eggs with diced onions, potatoes, and bacon, then baking the mixture in a brownie tin. Once cooked, cut it into strips or squares for easy assembly [1:2]. Another user suggests making the entire burrito and storing them in the fridge or freezer for quick reheating [1:6]. For a simple sandwich, you can microwave scrambled eggs and add them to an English muffin with cheese [1:10].

Egg-Based Dishes

Shakshuka is a flavorful dish that involves poaching eggs in a spicy tomato sauce. It's a great way to enjoy eggs with a twist [3:1]. Similarly, "Eggs in Purgatory" uses Italian spices and tomatoes for a unique breakfast experience [3:4]. Strata is another excellent option, combining whipped eggs, bread chunks, vegetables, and cheese, all baked together [3:3].

Make-Ahead Options

Preparing breakfast items in advance can be a lifesaver on busy mornings. Breakfast muffins and burritos can be made in bulk and frozen for later use [1:1]. A strata or Dutch baby pancake can also be prepared ahead of time and enjoyed over several days [3:12][3:6].

Creative Egg Recipes

For those looking to expand their egg repertoire, consider trying dishes like egg drop soup, anda paratha, or steamed eggs [4:1]. Gyeran-mari, a Korean rolled omelette, offers a visually appealing and tasty alternative to traditional omelettes [4:8]. These recipes allow you to play around with textures and flavors, keeping your breakfasts interesting and varied.

By incorporating these ideas, you can enjoy a range of delicious and easy-to-make egg-based breakfasts that fit your schedule and dietary needs.

College student here. I would love some more breakfast ideas. I have a bad habit of sleeping in till the very last second, which doesn't leave a lot of time for me to actually prepare food for myself before work. I have access to both a fridge and freezer, as well as to most general kitchen appliances (microwave, toaster, airfryer, stove, etc.), but my go-to breakfast has been a slice of bread smeared with peanut butter. Does anyone have anonther easy, potentially more satisfying breakfast?

I like to make breakfast sandwich / burrito fillings ahead of time for fast meals. Just did some this week- i beat a bunch of eggs in a bowl, added in diced onions potatoes and minced bacon, poured the whole thing in a brownie tin and baked it. When it was done i cut it into squares (strips for burrito) and fridged them. Now i just have to heat and assemble which only takes a few moments.

I love this!

For me, I like to just mix beans and rice(with spices to taste), and add whatever you want. Whether that's meat, veggies, etc. essentially anything that can go on a taco can go in it. You bake it in burrito form for X minutes if you make a dozen of them, and you have breakfasts for the next week and a half(Don't actually store these in the fridge longer than a week if you put veggies in them, onion will get gross by the 5-7 day mark). This recipe also works well with leftover barbeque chicken or canned chicken also works.

You can spice each burrito up differently, but they make for great grab-and-go choices if you wrap them in tin foil, and you can personalize them however you'd like.

I just make the whole burrito! Throw them in the fridge/freezer and then microwave or pan sear if I have time. I usually do eggs, a veggie (peppers, onions, spinach, potato, etc), cheese, and sometimes turkey bacon/sausage. Sometimes the tortilla is bit soggy if it’s microwaved, but if it’s pan it’s excellent!

If you don’t like the way eggs reheat (I think they get dry and kind of rubbery), scrambled tofu makes an excellent substitute!

Overnight oats! Basically, one part oats to one part liquid and whatever you like for flavoring. Mix the night before, stash in the fridge and stir in the morning. My kids like dried strawberries and add some mini chocolate chips in the morning.

I’ll throw fresh fruit right in and make sure it’s covered in the oats. They keep well for three or four days. Protein powder is a great addition. I’ve even seen carrot cake recipes!

Chia pudding, too!

  • 2 Tablespoons chia seeds
  • 1/2 cup almond milk or milk of choice
  • 1 teaspoon honey or other sweetener, optional
  • Strawberries or other fruits for topping

Stir then put in the fridge. Good for up to a week.

I didn't buy a specialized ceramic microwave egg maker, but just use a small non plastic bowl (with a small diameter at the base) scramble the egg, cover with a lid or saucer & heat in microwave 1 minute. Add seasonings/cheese & I prefer a whole wheat english muffin.

You can freeze breakfast muffins and burritos for reheating later. These are the recipes I always use and they are handy because you can add whatever you want to them (additional vegetables, for example) to suit your tastes. It's nice too because you can cook once and eat for awhile. Muffins: https://www.tasteofhome.com/recipes/on-the-go-breakfast-muffins/ Burritos: https://www.thepioneerwoman.com/food-cooking/recipes/a9887/breakfast-burritos-to-go/

Nuts paired with fruit. It's amazing how filling this ends up being. My favorite is almonds with grapes or an apple. I find it's more economically friendly to purchase the nuts in one pound bags or in bulk and ration out my breakfast supply.

String cheese or sliced cheese and meat (if you're a meat eater). I like to use a reusable plastic sandwich container and I place sliced deli meats and cheeses within it. It's like a cheese board or charcuterie board but I can take it on-the-go.

Omelets in a bag are another easy/cheap recipe that you can prepare ahead of time and cook them as needed. Boil for 13 minutes and you have yourself a delicious breakfast! https://www.allrecipes.com/recipe/85107/omelet-in-a-bag/

If you like poached eggs, you can cook them ahead of time, store them in your fridge in some water, and then plop them in microwaved water for 1 minute to reheat easily without ruining the yolk. (This is how I make quick eggs benedict!)

Overnight oats are another great idea. I recommend steel cut oats over rolled oats because steel cut oats have more fiber. What's great about oatmeal is that you can change it up frequently by adding fruits or different spices and sweeteners to help make it less mundane. Some people even like savory oatmeal instead of sweet (it's never been my thing, but it's worth a try)! My favorite is blueberry, cinnamon, and a little honey.

Smoothies are another great option because you can add fruits, vegetables, and have your protein in the form of a dairy product and/or added protein powder. My favorite recipe involves blueberries or strawberries, a banana, kale, milk, protein powder, vanilla or plain Greek* yogurt, and honey. *Greek yogurt is preferable because it has more protein and more calcium than regular yogurt.

What are your favorite savory, egg-free breakfast ideas?

Posted by Turbulent-Winter8463 · in r/mealprep · 3 months ago

I’ve been trying to switch up my mornings with healthier, more intentional breakfasts but I just can’t do eggs. I’ve fallen into the usual sweet breakfast trap (oatmeal, smoothies), and while tasty, I’m really craving something savory that isn’t just “last night’s dinner.” Recently I started experimenting with savory oats cheddar, chili crisp, even soy sauce and it’s surprisingly satisfying. I also found some easy breakfast ideas that helped me think beyond the typical stuff. Their overnight oats formula and toast combos (like peanut butter and banana on whole wheat or avocado with different toppings) are pretty adaptable for egg-free options. What are your favorite go-to savory breakfasts without eggs?

Ham and cheese kolaches.

Sausage, with or without jalapeno and or cheese, is also common.

They freeze very well. Thaw a few the night before and bake (or air fry) in the morning.

Similarly, breakfast sandwiches or burritos. They do not have to include eggs.

Yum! You are right! One of my favorite breakfast burritos has sweet potatoes, kale, goat cheese and some type of pulled/shredded beef with a spicy sauce (no eggs).

Kolache dough is typically enriched with eggs, fyi. So if it is an allergy they may not be able to have them, but if it is just an aversion they might be able to.

Hash! You can make it with anything. My favorite is cubed potatoes (or sometimes sweet potatoes), add sliced garlic near the end to just toast it up. Potatoes in the bowl/plate with grated cheese on top goes into the oven to melt while you fry up your egg to your liking. Finish with scallions and a few shakes of your favorite hot sauce.

Or do everything above but use grits/polenta instead of potatoes.

Toss on some crumbled bacon, sautéed spinach, sausage, whatever.

Or similarly, a scramble of sliced up precooked sausage (or diced ham), leftover hash browns or tater tots, and onions (sometimes halved cherry tomatoes). Let those fry up in the pan for a bit with some butter, then drop in an egg or two and scramble it up. Probably can also be considered a hash, but enough people call it a scramble when I talk about it.

Examples

Butter chicken sauce (tomatoes and cream /yogurt with Indian spices and butter)

Stroganoff sauce

Mushroom cream sauce with Dijon

Chili

Tired of Boiled Eggs and Omelettes — Budget-Friendly Egg Recipes for Protein Intake?

Posted by SirkeValiPyaaz · in r/Fitness_India · 4 months ago

Hey folks, I’m on a budget and trying to meet my daily protein goals, so eggs are a big part of my diet. But honestly, I’m burned out on boiled eggs and omelettes — I've had way too much of them lately.

Does anyone have some creative, cheap egg-based recipes that are high in protein but easy to make? Preferably stuff that doesn’t require fancy ingredients.

Thanks in advance!

Try Shakshuka. Super simple..you need tomatoes, 1 capsicum, 1 onion and eggs. You can buy cottage cheese (not paneer)...like Chobani or something cheaper. It adds volume and protien + isn't calorie dense. Look up cottage cheese and spianch eggs. Great way to add spinach to your diet too

  • In a hot pan add 1 tbps of olive oil, wait for it to heat
  • If you ginger garlic paste..add a bit of it like half a tsp, if you don't have it don't put it
  • Once hot add finely diced onion and add diced capsicum sautee for a bit
  • Then add salt, a tiny bit of haldi, red chilli powder if you have smoked paprika or kashmiri lal mirch then nothing like it and coriander powder sautee for a bit
  • Add grated tomatoes or tomato puree..cover and let it cook
  • Then with a spoon make 2/3 holes in the pot depending on the number of eggs you want to put and crack the eggs directly into the holes you have made
  • cover it and let the egss steam and you're done if you want add coriander on top

If you don't want to do any of this....take a jar of red tomato sauce of like barila...heat a bit of oil, pour the sauce directly into it, cover and cook for 5 mins, create holes, eggs in, cover 2 mins and done

Take 4 eggs, some crumbled paneer (I use homemade, so it is crumbled), salt, pepper and two slices of bread.

Add some oil into the pan, heat and crack all eggs into the pan. Then add the crumbled paneer around the centre of the egg. Add salt, pepper of you like it. Wrap up the egg (like flip all the sides towards the center like a napkin so it almost fits the bread size), ensure the yellow part is still a bit gooey.

Then flip it.

Then toast the bread slices and just make a Sandwich.

Try making Gyeran-mari, it’s essentially a rolled omelette side dish popular in Korea, I found it few weeks ago on YT, and have been preparing it atleast twice a week. The visuals and texture play makes it pretty appetising.

https://youtu.be/MamnY5TJQxo?si=5sdFxHDB-p0xVJEW

You can add finely chopped onions, spring onions, carrots, sausage, cheese etc anything to it, as long as it’s fine chopped.

Edit- prepped it again a day later

I know you very clearly said no eggs, but, if you are saying that because you don’t like the texture/taste of eggs I would recommend trying Ore-Ida Just Crack an Egg cups. I literally hate eggs so much, the smell and texture I can’t stand it. I tried these egg cups and there is bacon and potatoes and cheese and I’m so obsessed I eat them every morning now. It’s the only egg I consume. I can’t even taste the egg. They have different mix in’s and they are only 250~ calories prepared.

Ok, so I 100000% failed at overnight oats the other day. They tasted like mush :(

How do you keep them from turning into paste?

1 upvotes on reddit
Bdizzy2018 · 7 years ago

Soooo....I use an instant type from Trader Joes. If Im prepping for a week I use 5 packs and put them in my blender, then you can add your choice of fruit, strawberries, bananas and blueberries are what I use most frequently and I just blend and portion into my 5 jars. Mixture should be thick but pourable.

The hard part is you have to guess how moisture fruit is, for example if your banana is green and your strawberries are on the harder side then I would add a little extra water. But if your strawberries are ripe and juicy and your blueberries are ripe and juicy, I don’t add any water.

Overnight, the oats suck up the berry juice and our pleasant the next morning.

I hope this is helpful.

I like overnight oats or chia pudding, top with fresh fruit. I use water and almond milk to make mine instead of milk I like the taste better. Sometimes I add a spoonful of Greek yoghurt for a bit of protein and calcium, to balance to meal a little. I usually go for berries, some banana and apple for the fruit.

I can make these the night before, so there is no prep in the morning. And the chia pudding will keep for a few days so I can make a big batch and it will do a few days. It means no excuses to skip breakfast.

Eggs are out... What now?

Eggs have always been relatively cheap and a decent versatile breakfast. Right now my stores are crazy on egg prices and I cannot afford to buy them for my family of 4. My cheapest dozen eggs at Walmart is $4.96 but I regularly use like 60 a month.

What the heck can I do for cheap and relatively healthy breakfast without them? My kids are super picky, unfortunately. I personally can't eat oatmeal, it makes me sick for some reason. Open to other ideas though. Thanks in advance!!

I find that even one egg as part of a complete breakfast goes a long way. Cut a hole into toast and crack an egg into it on a skillet. Make a bowl full of rice and fry one over easy/ medium egg on top. Cheesy grits with some sautéed greens and/ or sweet potatoes with one fried egg on top of any component it super tasty and filling. Make egg muffins, one dozen eggs makes one dozen muffins and you can load them up with whatever meat, cheese and veggies you need to use up in your fridge; freeze them or keep in an airtight container for nearly a week. They reheat in a microwave about 15 seconds from fridge temp or about 30 from frozen; quick and easy on the go breakfast.

Having alternatives is great but also just knowing how to use one to complete a meal can make a huge difference in how long they last. Also consider getting a flat of eggs. If you know how many you go through you can get a really good bulk deal on multiple dozen if you have room for them in your fridge.

Or buy from local sources, if they aren’t cleaned you can keep them in a cool fry place at roughly room temp for much longer. Just be sure to float and clean them before you eat them.

Tofu scramble is really tasty, savory, and has plenty of protein! I season my crumbled tofu with tumeric, curry powder, garlic powder, paprika, mustard, soy sauce, and sriracha, let it marinate for a bit and then cook it up in the frying pan. Here to co-sign all the greek yogurt recommendations! I love cereal too and used to eat it a lot, but it was so carby and I'd be hungry again in an hour. The protein to calorie ratio on plain greek yogurt is UNREAL. I eat 3/4 cup to a cup every morning. Normally I'll add honey, banana, and a small bit of either pecans or bran cereal. It is SO delicious and very easy to change up by swapping toppings. It scratches the cereal itch to an extent and sticks around til lunch. ETA: and cinnamon! Add cinnamon! Makes it like banana bread.

Also there is no need to be stuck on the idea that breakfast has to be a traditional “breakfast” food. I love Trader Joe’s superfood burritos and bean and cheese burritos and would eat them for breakfast because they’re so quick. Turkey sandwich or a salad for breakfast works too.

I mush mine up pretty thoroughly, so most of it touches seasoning. I also drain and press it really well beforehand. Adding sauteed veggies like onion and mushroom and peppers helps break up the tofu, too.

But I will concede that tofu always tastes a little bit like tofu. It's not a replacement for eggs, just a different thing that can be similiar!

I rarely have eggs for breakfast. This is my normal rotation:

- chia seed pudding

- rice cakes or bread with peanut butter, cheese, or cream cheese

- wheat bran with cinnamon, raisins, and sweetener

- yogurt with fruits/oats

- instant grits with butter

- cereal

If you want something like eggs, you can make a scramble with tofu.

Dont knock it till you have lentil curry for breakfast. Advacado on toast, tinned tomatos on toast, beans on toast - British delicacy. Any form of toast.

I like 10%mf plain Greek yogurt with fruit in it, usually bananas and a berry. Sometimes I throw a bit of raw honey in too. Very quick and fills me up

Need egg ideas

Posted by Alycat10e · in r/Breakfast · 1 year ago

Goodmorning, so I have eggs everyday for breakfast, for the last 2 years. I have come up with new ways to "spice them up" but I need more ideas! So far I have done egg with ham on a english muffin, I've added different spices, I've broken hasbrowns in it and made a taco, I've used Sriracha sauce, I've added maple syrup and had it on a cinnamon englishmuffin, and many other things. Let me know what type of eggs you like and other suggestions for me to try. Thank youuuu

Try this one:

  1. making an omelette
  2. put 2 pieces of bread one on top of the other
  3. put the filling
  4. «connect» 2 pieces of bread :)

you will get a sandwich in an omelette

Omelettes are insanely versatile.

My favorite is sunny side up, which I use to top many of my breakfasts. My “monday stack” that I had yesterday is a chicken patty, with mayo, a slice of tomato, a hashbrown, topped with the sunny side! What can I say, I love stacks. They’re satisfying in a way.

Soft boiled eggs, with toast. Slice the toast and dip in the egg! Japanese omelettes are really good too!

this is my go to: 1 mashed up banana, a few small pieces of 100% pure dark choc (melted), sprinkle cinnamon, top with mixed unsalted roasted nuts. It’s very helpful for fiber intake and keeps me feeling satiated until lunch time

I do this too but with potatoes added! I make a big batch of breakfast potatoes in my air fryer over the weekend and heat up a small amount each day for my burrito. So good!

Congee (rice porridge. I love chicken congee, with ginger and green onion)

Nasi Lemak (rice cooked with coconut milk, served with various sides like cucumber, nuts, chili paste, anything you can think of)

Kashi (buckwheat porridge)

Bread and deli meat

There's lots of options that don't focus on egg if you look at breakfast in African or Asian countries, since they tend to have less egg and pastry focused breakfasts

Or make a peanut butter and jelly sandwich with a flour tortilla. To make it healthy skip the jelly and put honey or sliced dates/banana instead. Packs a decent amount of nutrients to kickstart your morning. You can also play with different nut butters.

Yeah I like those. I make those all the time. Plus Nutella and peanut butter goes good in a flour tortilla too.

I really like to do Nutella and either strawberries or bananas! I give it a little fry with a pat of butter or oil like I would a cheese crisp and it's a delicious crispy (albeit kind of messy) breakfast.

I like to make mine with coffee instead of water, then add peanut butter and maybe protein powder, nuts, dried fruit, and cocoa nibs.

Who says you have to have breakfast food for breakfast? I regularly eat leftovers from the night before. Soup and curry are yummy, as well as sandwiches

Here's a simple one -- https://www.foodandwine.com/recipes/basic-chinese-congee, though I'd use more water myself (10x the volume of rice). Ultra basic congee is just water + rice, cooked on low to not burn the bottom for maybe an hour until it reaches the texture you want. And here's a slightly more complicated but faster one -- https://thewoksoflife.com/20-minute-congee-recipe/

I've been sweetening my oatmeal with honey, add in some Chia seeds and some canned cherry's that I accidentally ordered.
