My boyfriend is not a vegan or vegetarian and I am vegan and he knows it is important to me so he wants to try making himself something vegan because he hasn't ever intentionally made a vegan meal before. I don't know what to suggest because something like Tempeh is a very acquired taste and so are most mock meats, and he doesn't like beans at all! All time easiest meal is to just make a pasta. He probably already knows how so he just needs to make sure his ingredients are vegan. Get noodles (check and make sure there are no eggs), a pasta sauce with no meat or cheese (I like spicy so I go for arribiata) and cook accordingly. He can add veggies if he’s so inclined! Like steamed broccoli, or sautéed kale, etc.
Pho or ramen soup with tofu and mushrooms.
My go to meal is: cube potatoes, boil for 5 minutes then bake at 425 for 22 minutes. Sautee a ton of vegetables, serve on top of the potatoes then chop greens (kale, cabbage) for a topping. Vegan bacon bits are also awesome. As a nutritional bonus we’ll make a sauce and add whatever healthy stuff we have to it with some maybe BBQ sauce, hot sauce and veganaise.
This sounds really good, will give it a try tonight.
How about just a basic veggie stir fry + rice?

you could try a pasta with a simple tomato sauce! it's a classic and super easy to make. you could add some veggies like spinach, zucchini, or bell peppers for some extra flavor and nutrition. also, try some roasted sweet potatoes or baked potatoes with a little olive oil, salt, and pepper so good and very filling! if he's open to it, you can also make a veggie burger with beans, oats, and spices. something not too crazy but still super tasty and easy to make. hope he likes it! 😊

One of my favorite simple vegan meals is canned refried beans, avocado with salt and pepper, and tortillas, chips, toast, etc on the side.
Also, smoothies are some of the most versatile and easy things out there.

IMO, the transition is easiest when you just take what you would normally eat and veganize it. Use Impossible meat instead of ground beef, leave the sprinkles of cheese off, use vegan ranch, etc. This makes it less stressful and easier to stick with.
I love rice and beans. It's a staple in my diet. The more beans you eat the more your body produces the enzymes to break them down and the less gas your body produces. I know that the extra gas is an issue for some people but it becomes a non-issue after a while.
You can then take that basic combination of rice and beans and place it in some tortillas with something like avocados or tomatoes and it's delicious.

This is a great idea! I'm already vegetarian. I actually have been all my life, but I notice that I tend to dismiss what's wrong with eating dairy, both for myself and others, and eating dairy creates an incredibly easy way to pass yourself off as vegetarian without ever getting into the deeper meaning behind why you don't partake of animal products. I just learned how to use my new instant pot a couple of days ago and made black beans. I will never have to battle with making black beans from scratch again. The whole reason I bought one was for that purpose, and I love rice and beans :)
Rice and beans can be eaten so many different ways. It's amazing how versatile that simple combination actually is.
Another meal that I love making is curry. I found a sweet potato curry recipe that I enjoy and have adapted it when I haven't had sweet potato. For example, I've taken that recipe and made carrot curry or tofu curry. Curry is another super adaptable meal.
As a side note, one of the pleasant surprises about going vegan is that you end up cooking/preparing more meals yourself, or at least most people end up doing that. Use that time to experiment a little.
I’ve recently gone vegan and I’m trying to build up a list of go-to meals. A lot of the recipes I find online have tons of ingredients or things I’ve never used before. Does anyone have suggestions for simple, everyday meals (bonus if they use stuff from Woolies/Coles)? Even 2-3 regular options would be amazing to start with!
I love pasta and I do this one often.
I sauté garlic and a shallot in some olive oil, toss in some cherry tomatoes until they burst, add in some sun dried tomatoes, some pasta water and some cashew cheese or cream to make a creamy sauce. Then I chop a cooked v2 burger and add some to my bowl. It’s yummy, I seen it on instagram, I’m pretty sure it’s eat more plants account.
I also do Mexican black beans. Sauté garlic and capsicum with some smoked papand cumin. Add in about a tablespoon of tomato paste. Toss in a can of black beans and its brine (organic black beans) and a teaspoon of peanut butter and simmer for about 5ish minutes. I eat that with an avocado, some coriander, a chipotle cashew cream and a tortilla.
I wrap the leftovers in a tortilla for breakfast!
I also just love Asian style noodles with tofu and veggies. I mix soy sauce, sweet soy sauce, brown sugar, chilli garlic sauce and sesame oil for the sauce. Yum 😋
Unless you’re also trying to go WFPB, then start with what you usually cook and just do substitutes…easiest way to transition! :-) if you share what your usual go to meals are, I’d be happy to suggest subs :-)

Something to try next time you do bangers n mash: instead of boiling potatoes to mash, mash up a can (or two) of butter beans. Add nooch, onion powder, paprika, garlic, etc... follow your stomach. Then warm it up. Use stock or plant milk to loosen it up if its too dry or not creamy enough.

Curry is easy - The Thai curry mixes are pretty reliable* from woolies/coles -then you just need a bag of veg, potato and some rice and easy. Was my go to when I started 17 year ago. Good luck you are awesome!

I add beans as well - refried and black beans are yum. Also, tofu is made of beans lol.
For pasta. Buy the plant based jar pesto from Coles and mix with cooked pasta. Add some tofu or vegan mince. Done. Rice dish. Simply tofu cooked how ever you want with rice and veggies. Done.
My easy/flex meal is simply tofu & rice + a sauce, usually with chopped veggies as a side. For the tofu I use firm tofu (macro or coles/aldi brand) and press it out, soak in soy sauce for a few mins and then toss in a neutral oil, then sprinkle whatever seasoning (usually garlic powder, paprika, pepper) and then corn flour/starch, though using a combo of rice and corn flour is nicer imo, then I cook in the air fryer for 10 mins or so on 200 (though I guess there's no difference in cooking it in the oven?).
Can really do what you want with it, I often cook it for a couple minutes in sweet and sour or teryaki sauce after it comes out of the air fryer, if I'm super lazy I just get some vegan sauce off the shelf and use that.

Auf der Seite immer lecker essen gibt es sehr einfache gerichte, die ich mache, wenn ich nicht viel Zeit habe. Vielleicht wirst du dort fündig. Ich habe mal eines meiner Lieblingsrezepte, die Ofen-Gniocchi verlinkt. Die kann man auch gut mit weiterem gewürfelten Gemüse, Kichererbsen oder Tofuwürfeln abwandeln.
diese Ofen Gniocci hab ich schon so oft nach gekocht und sie sind perfekt für Einsteiger und schmecken echt geil.
Step 1: brate Zwiebeln, Knoblauch und Currypaste an
Step 2: füge 3 verschiedene Gemüse hinzu
Step 3: füge eine Protein Quelle(tofu, veggie hack, linsen, Kichererbsen) hinzu
Step 4: lösche das ganze mit passierten Tomaten oder Veganer Sahne oder Kokosmilch ab.
Step 5: würzen
Step 6: Reis oder Nudeln oder Kartoffeln als Beilage
Ich finde ein super einfaches Rezept ist so ein Basic-Kichererbsen-Curry:
1 Zwiebel gehackt
2 Knoblauchzehen zerdrückt oder gehackt
1 Dose gehackte Tomaten
1 Dose Kokosmilch (400ml)
1 Dose Kichererbsen (400 Gramm)
2 TL Garam Masala
3 TL Currypulver
1 TL Kreuzkümmel
Salz, Chilipulver
Schmeckt super lecker, ist schnell gemacht, hält sich im Kühlschrank ein paar Tage und lässt sich gut einfrieren. Außerdem hat es ein vollständiges Aminosäuren-Profil. :D
Manchmal, wenn ich noch welche da hab, schneide ich noch rote Paprika in Würfel und schmeiß sie mit rein wenn die Zwiebeln fast fertig gebraten sind.
Ich nehme statt Kichererbsen rote Linsen udn entsprechend noch Wasser/Brühe, sonst das Gleiche. Ist echt ein super Rezept.

My peanut noodle recipe: Cook one box spaghetti. Blend together peanut butter, orange juice, soy sauce, sriracha, garlic and ginger (to taste, I never measure anything). Stir fry broccoli, carrots and bell peppers. Stir sauce into drained noodles and top with veggies. My picky autistic kid has loved this meal this since she was a toddler.
(I’ll elaborate below on the details of each one, but I’ve put it down there for the sake of readability since I’ve written a novel)

Stir fry
Shepherd’s pie
Overnight oats
Pita pizzas
Curry with chickpeas and rice
Quinoa salad
Lentil loaf with potatoes and coleslaw

(1) I’ll add this in in just a second, I posted about this yesterday Edit: “throw a couple cups of broth (I use a vegan chicken bullion cube) in a pot, add in diced sweet potato, onions, carrots, and celery. Also add soy curls to the mix. The soy curls are supposed to be pre-soaked before you add them, but I don’t bother and just cook them in the broth- you’ll need a lot more broth than you think if you’re doing it this way. In another pot, boil some noodles (I like rotini) and add to the pot when they’re cooked. And then bon appetit!”
(2) jarred pasta sauce with your noodles of choice. Garlic bread can be super easy- preheat the oven to 400-ish degrees Fahrenheit. Take vegan butter and crush some fresh garlic (or if you’re really lazy, just garlic powder) and optional dried cilantro. Mix, then spread on your bread of choice. A baguette split down the middle is better tasting, but I’ve done this with slices of bread, and it turned out okay. Wrap the bread in tinfoil, and bake. Cesar salad dressing plus romain lettuce (I’ll either cut or tear the lettuce) and optional croutons. I like to top the pasta with a nooch mountain and a river of hot sauce, but you do you!
(3) Veggies + a “protein” + noodles. Frozen veggies are super easy, and you can even get mixes specifically made for stir fries. Easy fresh veggies options are mushrooms (you can even buy fresh pre-sliced), shredded cabbage, bell pepper, broccoli florets, and onions (you could pre-slice fresh, or buy frozen diced onion). Canned sliced water chestnuts add a nice crunch. Fry this off in a pan. Meanwhile, cook noodles of choice (rice noodles, soba noodles, udon noodles, etc.,) and drain. Add whatever sauce you want to the veggie pan (I like to make an easy peanut sauce, but there are tons of other options! Jarred stir fry sauces, sweet and sour sauces, spicy garlic sauce, etc.,). Once you’ve incorporated the sauce, add the noodles and stir them into the veggies. If you want, you can add a “protein” item to bulk it up a bit. Tofu (I like cubes of extra firm tofu, or deep fried puff tofu. I’ve made the latter by covering in sweet and sour sauce and baking, and it was incredible.) Optional toppings like crushed peanuts, bean sprouts, hoisin, chilli sauce, and green onions.
(4) Lentil shepherd’s pie with potatoes and canned lentils is awesome! You can use a bagged veggie mix and pre-made gravy.
(5) This was a staple for me when I needed a quick breakfast. Add oats and any liquid of choice (I’ve literally made chocolate orange oats with cocoa powder and sweetened canned mandarin oranges, using the liquid from the can). Add-ins are endless: ground flax seed, fresh or frozen fruit, nut butter, jam, or maple syrup. That hardly scratches the surface in terms of options. Dice some apples and mix with cinnamon (you can cook the apple first if you feel like it), maple syrup, and flax seed. Voila, lazy apple pie oats.
(6) this may be weird, but I grew up eating this as a child, and I love it. Spread tomato paste (or pizza sauce if you prefer) and optional dried Italian seasoning on one side of the bread. Top with anything you want- mushrooms, zucchini, veggie pepperoni, bell pepper, spinach, vegan cheese, pineapple, jalapeños, shredded vegan chicken, tomato slices, etc.,
(7) Buy a pre-made curry (there are jarred options and spice mixes) and mix with anything you feel like- rice, chickpeas, tofu, veggies, etc., For example, mix butter chicken spice with coconut milk and add to pan with chickpeas. Serve with a side of rice and optional bread product of choice.
(8) there’s tons of recipes for this online. I can make recommendations if you’d like
(9) there’s tons of recipes for lentil loaf online. A lot are super easy and it’s generally freezer-friendly if you want to batch cook. Mix coleslaw with dressing of choice (I like to make a vegan mayo-based dressing). Add any sides- boiled corn on the cob, frozen cooked peas, creamed corn, mashed potatoes, etc.,
(10) It Doesn’t Taste Like Chicken has an awesome recipe for what they call Korean lentils. I like to pair it with a side of rice and baked veggies- usually something like broccoli, asparagus, green beans, and sweet potato.
Red beans and rice in the crockpot. Ingredients are red beans, celery, green pepper, onion, Cajun spices and water. Cook for 6-7 hours and serve over rice. I’ll find the actual recipe I use if you’re interested, but you can probably search and find something you’d like.

Patiently waiting for replies! I was going to ask this same question. So many of the vegan recipes have dozens of ingredients and take forever to cook. This is fine some days, but sometimes I just want something quick and easy.

Veganism isn't some magical diet. Just eat what you normally would but swap the meat for mock-meat, swap the cheese for mock-cheese, and use soy/oat/almond/pea milk instead of cow.
Also, don't forget that veganism is about more than diet.

I didn't ask for your assumptions. I know veganism isn't a magical diet. I'm doing it 97% because of the ethical ramifications of meat and dairy, and I don't like meat analogues.
The best way to transition is to eat what you already eat, but swap for vegan alternatives.

Dry out tofu for a day, cut it into cubes, add garlic salt and roast at 425 for a 20-30 minutes! crispy and so good, i usually make it with some roasted veggies and dip it all in TJ's Soyaki sauce

Personally, I’m a big fan of extra firm for things like bbq tofu or searing for sandwiches. And I like soft for fried (we brown it in a little bit of olive oil) to put into veggie stir fry with brown rice or quinoa. As far as veggies go, I’m a huge fan of cauliflower, broccoli, carrots, and baby corn in stir fry. If you want to roast veggies I highly recommend eggplants, yellow squash, and zucchini.
Extra firm is the best for this. Broccoli is my favorite for roasting too! Also sweet potatoes, mushrooms, eggplant, tomatoes, onions/garlic cloves. Good luck!!

You should also stock up on rice, quinoa, canned/dry beans, frozen veggies, oats, sweet potatoes, pasta (trader joes has good high protein, gf pasta), onion, and garlic to make meals in a pinch-like buddha bowls. Just find some good vegan sauces that you like-either homemade or in store.

I am new to being vegan but I don’t really like beans or tofu. The texture is what I can’t deal with. But I’ll make exceptions for beans if it’s like in a chilli or something like that. Also, I’m not the best cook, I’m still learning. So any recommendations for a new vegan?
What vegan sources of protein do you like?
THis is the most important question here as you are going to need to eat protein sources if you are going vegan.
Beans and tofu are the most common vegan sources of protein, but they are not the only ones. You can try using lentils (lentil soup or stew, dahl, lentil salad, vegan bolognese sauce) or tempeh & seitan (sauté, BBQ-style), TVP (textured vegetable protein, can often be used like chicken) & soy curls. You can use faux-meats to veganize some classic recipes using vegan patties, sausages or minced meat.
You can try using beans and tofu another way, in order to by-pass the texture issue. Chickpeas can be blended and become hummus. Chickpea flour (besan or gram) can be used to make filling salty pancakes, panisse or socca. Tofu can be eaten scrambled, like eggs. Silken tofu is used in a lot of desserts like vegan panna cotta, soft tofu can be added in Asian soups or in mapo tofu.

Ratatoulli! Chunk up some aubergine, courgette, peppers and tomatoes and stuff. Cover in oil. Bake. Serve with big chunks of bread for mopping up.
Mushroom recipes are great if you like those. I make mushroom quesadillas with vegan cheese, garden also has really great little fish like patties that I make tacos with, spaghetti with Boca grounds are good and of course I add mushrooms to that too. I also just found an orzo salad recipe with tomatoes and cucumbers and black olives. It looks good but I haven't made that yet.

Mexican beans. Black beans, taco seasoning, red onion, capsicum, corn. You can get a lot of mileage out of this meal because you can eat it so many different ways (on chips as nachos, in wraps, in hard shell tacos, etc). It goes great with avocado and coriander.

Tofu stir fry. Just like any other stir fry, but substitute tofu for meat. I make a sauce with a couple of teaspoons of cornflour mixed with water, vegan oyster sauce, soy sauce, a little sesame oil and water to increase the volume to about 1/2 cup.
Substitute meat for tofu. 😉
Japanese curry. Buy golden curry brand cook veggies and tofu then chuck in golden curry cubes with a side of rice or noodles

I've got no "initial vegan dishes" because I always ate lots of plant-based meals, even when I was a vegetarian.
I love pasta with tomato sauce and veggies, roasted veggies, pan fried rice or millet with loads of veggies, creamy vegetable soups, oatmeal, plant-based yoghurt with fruits (cherries!), krautsalat (german: vinegar based dressing), tomatosalad, steamed potatoes, baked potatoes, loaded potatoes, all the potatoes!, maultaschen (southern german dumplings), freshly baked breadrolls with vegan butter, proteinbars with peanut butter and hempseed mix, proteinpudding... There's just so much food I really love and I already ate most of it before going vegan.
