I like to keep it simple. It's supposed to match the vibe. What material do you think fits for a bamboo jungle house?
Some jungle wood would be a nice first start since it's everywhere, try more glass or empty walls for a more open-concept look. Campfires don't burn things, so you could use some of those for a campy look. Also, you can use a campfire to make a chimney with smoke coming out. Stone brick is always a bop as well, goes with basically everything. Clay bricks would probably do pretty well, considering the very indigenous look your hut has.
All in all, just add random materials until something sticks. Good builds always boils down to material variety.
Maybe mix in a few other colors in the build like green bamboo blocks for pillars or maybe stripped jungle logs as pillars.

Make the trees more unique: add branches with bird nests on top (Dead coral works), put some parrots in there too; place cocoa pods, melons, glowberries, spore blossoms and firefly bushes to give more life to the place.
In a few areas, replace the trees with more bamboo so it feels even more like a bamboo forest (Just like the biome itself in the game). Also maybe add Ocelots and Pandas if possible.

I'm wanting to build an underground jungle base, if there could be a big open cave system about 50+ blocks below the nearby cave with deep water that would be an amazing bonus for this.

Ice spikes are there. Every biome Type is there. Biome variations like jungle edge might not be. But every special type like mushroom island, ice spikes, warm ocean (Coreal reefs) Frozen ocean (Icebergs), it is all there. I used my tool. I literally had All biome sets on, Plains, Sunflower plains, Flower Forest, Ice Spikes, Frozen Ocean, Ice Plains spikes. So Yes every biome does exist.
But are they viewable is another question. You can say ice spikes biome exists there, but if it's one spike what does that really do for the player?

No problem. Figured I might as well share what I find!
Back in the day, Jungle biomes used to be fairly common, but ever since 1.7 they've become super rare. On my personal minecraft world the nearest one was 10,000 blocks away and I had to use a biome finding website because I had been searching for so long to try amd find one on my own but couldn't. Currently jungle biomes are rarer than mesas, ice spikes and even mushroom islands (in terms of frequency, not overall area). I'm not saying they should be super common, but they should be at least more common than these 3, or even just as rare but currently they're just too rare.
Also, I've noticed that the snowy plains biomes (tundra I believe they're called) are super rare too and they should also be less common.
And maybe savannahs should be less common. I know they're frequency is realistic but I find them to be really annoying as the wood colour is kinda gross and the grass colour is too grey. In my experience they're a lot more common that plains, which are clearly a superior version, and I think they should at least be a little rarer, but I'm not too concerned about that.

Well they're useful any time you want bamboo, jungle wood, parrots, pandas, green grass, etc. They have a lot to offer. But I don't go to them very often because they're really hard to find.

Agreed. When I went hunting for my Jungle biome, it took 8 hours, ~20k blocks, and on the way I found ice spikes, badlands, AND the elusive mushroom island. If that isn’t ridiculous I don’t know what it.
