The only ones I’ve watched and loved so far are Vinland Saga, Gangsta, Monster, Kaiji, Hellsing Ultimate, Perfect Blue and Paranoia Agent. I also tried Berserk (1997) but dropped it because it leaves out a lot from the manga.

Watch orb right away! If you liked Vinland saga you'll love orb for sure! These two animes are so beautiful and I feel blessed to have stumbled upon them.
PLUTO: literally a 1:1 transposition of the manga as far as I remember. The mangaka is the same of Monster, but the animation and drawings of the anime are top notch this time. The plot is not obvious at all and characters are complex and super well written. It's also short enough to binge watch it.
CYBERPUNK EDGERUNNERS: super bright colors and dynamism of the story, action packed but not just an action flick with super flat characters. In fact, you are going to get attached to every character probably. I think the budget for this anime wasn't very high and yet they managed to create something incredible with it. And again, short enough for a binge watch!
DEVILMAN CRYBABY: another reinterpretation of a classic and another easily bingeable - 1 season only - anime. This time the fluidity and dynamism of the animation are the diamond tip that makes this anime shine, and you'll notice it expecially in how the running animation is treated.
ZOMBIE 100: only season 1 is out iirc. Another incredibly energetic anime which picks up the usually dire and gloomy atmosphere of the zombie genre and twists it into something crazy and colorful!
HEAVENLY DELUSION: I loved this anime tbh, it's so well written, drawn and animated and the characters have depth and insane evolution/growth throughout the story. It's also not so obvious and you will need to put pieces together while the story develops. There's only season 1 out for now sadly, and many things will stay unanswered for the time being (but many you can guess)... and this might make you wanna pick up the manga.
DOROHEDORO: paradoxically, Dorohedoro is the manga I love THE MOST and yet I've put the anime at the bottom of this short list (that could go on and on and on btw). Why? Because the story is exaggeratingly psychedelic, nonsensical but also all-sensical (making up words here), it looks like if it's just pure madness going on and yet everything stitches together perfectly fine. When Q Hayashida published dorohedoro she was criticised for her bad drawings (accused of being super sketchy and anatomically bad), but she didn't give a damn and just kept pouring her love in this amazing, absurd world... And it's worth a read , ooooh if it's worthed! The anime only has 1 season for now (more incoming) made by studio mappa (like vinland saga). It's a good transposition of the manga, there's quite some cgi but imo it's well integrated in the animation. Couldn't not reccomend this anime!

Last mention, risky mention: Made in Abyss. I loved the story, the idea, the animation, the drawings. Yet, I'd never ever ever EVER suggest this anime to anyone who's not very well accustomished to the world of animes and mangas. Why? Because - sadly - the goddamn mangaka has some weird fetishes and - SADLY - the characters are children. 2+2 = Japanese weirdness at its peak. Thus, if you're accustomished to Japanese weirdness and you automatically erase it and hide it in a "Japanese weirdness drawer" located deep inside your brain, go for Made in Abyss. Otherwise, skip it completely.

I don't actually care about demographics, but I've seen too many posts that are like "I want to watch more seinen, I've watched Attack on Titan, these other shounen that have mature themes and this other stuff that's not even based on a manga" so I wanted to ask for seinen recommendations without doing that.
I liked Kaguya-sama for the first 2 seasons, but got bored of it by the 3rd season. I loved Somali and the Forest Spirit. I also liked School-Live and Girls'Last Tour a lot, and I absolutely loved Haven't You Heard? I'm Sakamoto.
I like most stuff that isn't ecchi, I've been really into revenge stories lately and also BL but I haven't really come across any gay seinen anime.
3-gatsu no lion is a very interesting and mature show, I highly recommend it.
First season struggles with tonal shifts, but that's the only criticism I have for the show

Black Lagoon and MushiShi are criminally underrated, and two of my personal favorites. Vinland Saga is very good, along with Monster and Hellsing Ultimate. Erased is beautifully depressing, Elfen Lied is gory mind bonking fun, I mean they’re all solid. Only one I haven’t seen is Golden Kamuy, but it’s on my watch list.
Out of all of these here my pick is MushiShi. It’s such a good watch and has so many sincere scenes that are engaging and mysterious.

Yeah but which version? Also Berserk's real deal is it's manga. Even the best Berserk anime is like fan fiction comparing to the manga. Berserk animes are heavily censored and abridged. You can't get the real Berserk experience with just watching animes as opposed to some other manga adaptations.
I absolutely love this anime. It's so kinetic and really captures what it's like to play sports competitively. I immediately watched Tatami Galaxy after this and was not disappointed.
Ichi the killer, also who ever recommended Higanjima eat a raw dick that manga is 200 chapters to long it's basically the same shit over and over fight main vampire lose fight main vampire lose and on and on.
I prefer Berserk 1997 over any of the Vinland Saga anime seasons. The Susumu Hirasawa soundtrack as well as the story beats anything Vinland has to offer & I love Vinland Saga…

Fate/Zero isn't a seinen since it's not based on manga. Attack on Titan is a shounen.
Seinen is also very diverse since it just means anything based on manga that was in a seinen magazine. A lot of cute girls doing cute things shows are seinen, and so is for example Kaguya-sama: Love is War.

Fate/Zero isn't a seinen because it's based on a light novel and AoT is a shounen though.
Most people on r/anime don't know what shonen/seinen really is.
They think a show that "feels adult" is seinen.
I mean the words for the demographics don't really have the same meaning for the majority of the people in the west. We also say "anime" when we mean "anime made in Japan", even though that is not what the word "anime" means in Japan.
"Hentai" also is a term that has a different meaning in Japan.
Most people in the west use "Seinen" as OP does. It honestly seems more practical to use it over "anime adaptation of a manga that was published in a magazine aimed at young male adults". Like who would even use the term like that besides researchers?
