All I did was just used roundabout the entire time and also converge from the dlc for the first phase seemed to be under by a decent amount of time for me

Every single boss is not only super fun to fight gameplay-wise, but both the music and the artwork is perfection.
(small positive rant start!) Prioritizing the 'coolness' factor of a boss is a trap I've seen many games fall for, which is not a bad thing in of itself, but it often comes to the detriment of gameplay. And for me personally, good gameplay is a make or break, regardless of how good the artwork and music is. When I started the game for the first time 4 days ago, I was honestly pretty certain this would be the case. Great music and art, but severely lacking in the gameplay section. (which is why I hesitated to play Cuphead for so long)
But I can proudly say that, in my opinion, this game DOES NOT fall into that trap! Every attack looks stylish, but are very well telegraphed, which makes them a joy to learn. You know what to expect at every turn and can plan around it (with very few exceptions). What I love the most though, is how important and rewarding good positioning is. This is obviously personal bias, but I LOVE positioning based dodges and planning ahead (which is also why I love souls combat so much!).
To end off, the parry took some time to get used to, but when I mastered it, it felt great. And in the beginning, I honestly wasn't a huge fan of the plane bosses or the run-and-gun levels, but they really grew on me.

I haven't tried S ranks or even expert yet (still stuck on the Devil actually), but same. Probably because the airplane ones are more like classic bullet hell than the platformers, so it just depends on your prior experience which for me is a shit ton of undertale fangames

Agree, previous experience in gaming can modify the tier list entirely. The difficulty level also impacts a lot. As example, Grim Matchstick and Rumor Honeybottoms deserve Tier S in Normal Mode.

i really wouldnt count the casino night minibosses and the kings guantlets. You can't technically 'S-Rank' them, plus, they're not even really bosses
I think Hilda and Beppi should switch places. Hilda is way quicker to beat and most of her attacks are easier to dodge. The phase of the Beppi fight when the roller coaster is going and he rides the carousel horse/donkey that spits the horse shoes always wrecks me. I almost always fail to dodge either the horse shoes or the coaster passengers at least once, and that leaves me in a bad place for when Beppi turns into the carousel and starts spawing the baseball penguins.
I personally never had trouble with Beppi's third or fourth phase, its the parries I need for Hilda berg that kill me

I ranked each of them per tier as well but most of them are interchangeable within the tier they are in tbh + yes, I got to beat Cala in 9 attempts, she was easily the least challenging plane boss to me. If I ranked it would be: Cala -> Djimmi -> Hilda (Interchangeable with Djim tbh) -> Wally -> Kahl
Also this is expert and not about S ranking or a special challenge, I did not use any dlc weapons to fight the normal opponents and I did not try Mortimer/Howling Aces/Saltbaker yet.
Djimmi stage 3 has an exploit/cheese that makes you able to beat it without moving, if it was not a thing the stage itself is Handleable.
Imma pray for you when you fight Saltbaker on expert, lmao.
Also, what makes Hopus Pocus harder than the rest of the Dice minibosses for you? Besides the attack where you have to parry the one pink symbol to avoid it (which is pretty easy), Smoke Bomb makes the fight a joke.

Cagney is ok but no way is he the best boss in the game in my opinion. The fight is the third easiest in the game (excluding King’s Gauntlet) and none of his attacks are really interesting or satisfying to dodge with one possible exception.
His boss theme is good but pales in comparison to others and other than his idle animation he doesn’t have a great deal of charm

well i've done every boss in inkwell isle 1 and 2 and i'll do inkwell isle 3 as soon as i can, but i really don't get why djimmy the great is so high up... i almost did it first try and didn't see any major change with the normal version

Imo hilda berg isn't that bad on regular, but she gets a TON of buffs on expert which makes her hell, and I just hate djimmi because he has so many phases, phase 1 has some stupid ass attacks like the treasure where he throws his entire yard sale at you and phase 4 is hell cuz it's so cramped and so many things are shooting at you at once.

Interesting that the only plane mission that you don't find incredibly agonizing is Cala Maria. To be honest that's one of my least liked due to the stupid Medusa Blast attack whilst none of the others had anything that unfair.
