That's what I was afraid of. Unfortunately, this friend of mine shared explicit images that they are threatening to post publicly. Obviously, if they've screenshotted or downloaded the images, deleting them from WhatsApp won't do anything anyway. It's a scare tactic to get what they want. If your friend's face or any recognizable markings isn't in any of the pictures, they can be easily denied if it comes down to it.
If it's sensitive and obtained by a scammer for that reason, deleting won't help you. They will have screenshotted or copied it already. - if it were even possible.
On the bright side, scammers are interested in money. Once they find there's no way to get any, they lose interest and go to the next victim. Chances of anything happening with the sensitive information is minimal.

My argument would be that if the message hasn't been read, deleting it without a trace is fine. If it has been read, it shouldn't be possible to delete (instead you should be able to "hide as irrelevant" and the recipient can still view)

No, there's no longer a time limit for deleting old messages, IIRC. However, there is a 15 minute time limit for editing a recently sent message.

How about a simple scenario where you ask someone a question get a response that you act on and then that answer gets deleted without a trace? You can’t prove that you got a response, just that you asked a question..

There are modded WhatsApp versions that allow you to keep seeing a message even if the other person deleted it for everyone yes.
Keep in mind those mods are against WhatsApp's ToS and you are in risk of a ban.

Just tried deleting some old message but I only have the option to delete for myself, which is pointless. I don't care about me having the message, it's the other person thats the isuse. Is there any way around this?

Delete for everyone always deleted it only for the ones that didn't read it so far or in a short time window of 15mins after you posted I think. But that's for one on one chats
In group chats everything older than this short time window never got deleted for others. Group admins may be able to tho.

Right now I just tried to ‘delete for everyone’ a message sent only 4 hours ago, and the only option available here is to delete the message only for me.
I tried searching for an answer on the internet (Reddit, Twitter, Google, etc) but I didn’t find anyone talking/questioning about it.
At the moment I’m posting this, I’m on the latest iOS version (16.3) and my WhatsApp app is also updated to the latest version (23.1.75).
Does anyone know what’s going on?

EDIT/UPDATE (January 26th, 2023):
I talked to a friend that uses Android (to make a test on his side) and he told me that on his phone the option 'delete for everyone' is still showing up; however, on the web desktop version the option 'delete for everyone' is NOT showing anymore (the test was made on the exact same messages (on the phone and on the web)). He was the only person I talked directly about this issue, so I didn’t talk to anyone on the iOS.
My guess is that WhatsApp reverted the decision and now the option ‘delete for everyone’ will only be available until around 1 hour after the message(s) was sent (the same thing it was before). If this is proven to be true, I think it is very unethical; they (WhatsApp) could at least release a note to the users explaining/exposing their decision.
Turn on airplane mode and change your date/time to that of message then delete for everyone.. Worked for me today on iPhone X latest software latest whatsapp.
EDIT: this did NOT work. It made it look like it worked on my end. But the other person still received the messages.

A few days ago I was able to delete messages for all participants, now I only see the options "cancel" and "delete for me" when selecting the delete option.
