1/2: OG Tonkotsu (shio) A thick silky broth. Yep the bones definitely emulsified into the broth. Perfectly seasoned. Not underseasoned or overly strong upfront salt. Nice smooth umami. This is a well executed southern style tonkotsu. Rating: 4.5/5.
2/2: Tsukemen A thiiiiick broth with concentrated and strong flavors. Great complex flavors. Smoky, fish/bonito flavors, and citrusy. To explain the flavor, its like a thicker tonkotsu tajin flavor. Really good. The thick broth and flavors sticks onto the great thick noodles. Tsukemen is one of my fav styles of ramen due to the great bite of the thick and separated noodles, and i love the strong concentrated flavors. Rating: 4.5/5.

They have their tonkotsu ramen which is very rich and smooth .. but I get really excited for their niboshi bowls when they do that special for a week or so.i drive from sa to austin for it when I ge the chance to have it

Yes, but if thats what it takes (1 slice chashu and 1/2 of ajitama) to keep the tonkotsu bowl price at $13 in Austin, TX, I'll take it (they allow u to add more toppings a la carte).
One or two slices is very traditional. Hell, there's even a no topping trend right now.
Agreed I'm not complaining. I always say I dont complain about prices in major cities because I cant imagine the cost for good and produce, brick and mortar, etc.

Honestly, if we take the example of "a letter to Baji", I would say that Baji was not Chifuyu's best friend in it, but that it was Ryusei. Because we must not forget that Chifuyu's friendship, whether with Baji or Takemichi, is based on basic respect (they are literally his division captains and Chifuyu, even outside of the gang, if Takemichi or Baji wanted to beat him up just like that, he would say absolutely nothing I'm sure and he would let it happen). So for me, Chifuyu with the two cannot completely be himself and be fully free in his movements because he always has this form of blind respect which prevents him from not seeing them on a pedestal.

I feel like Baji and Chifuyu is more like an older brother younger brother dynamic whereas Takemichi and Chifuyu are more standard best friends.
i would say baji based on what you see in season 1 (and the first 10-ish volumes of the manga) and they (baji, chifuyu and kazutora) also seem really close >!in the future as they all work in the same pet shop!! !< but i also really admire takemichi’s friendship with chifuyu, they make a really good team!! <3
JINYA ain't it. This is top 3 ramens of my life. Great prices, locally owned brother-sister business. If you crave ramen give it a try, you won't regret it. SO GOOD.

Had the chance to go there a handful of times since they reopened! I’m happy that my experiences were the just as good as pre-COVID shutdown too. Jinya is not terrible, but they’re definitely aimed at a different audience.

Happened to be in the area around lunch and stopped by. Got the Tonkotsu ramen ($20) and was pretty satisfied with it. Thick noodles and thick pork broth, with nice and soft pork slices. The broth left my mouth all sticky from the collagen. The egg was perfect as well, which is usually the basic standard all ramen shops should have.
Only complaint is that perhaps it could have more spring onion or other veggies to balance it out a bit.
The karaage chicken looked bomb but I didn't think I had it in me to eat it all alone. Would definitely recommend
Karaage chicken there is above average for sure but not mind blowing.
I think the spicy miso ramen is their best one having worked my way down the menu over the last few months 😅

tonkotsu(mi favorito) = caldo de hueso de puerco, tuve una discusión muy interesante con los que trabajaban ahí dónde básicamente me dijeron que no sabía de lo que hablaba pq ellos eran los expertos y el tonkotsu era de pollo

No tengo el placer de conocerlo, pero investigaré más al respecto gracias por la recomendación , ryu ramen está regular la verdad creo que si has tenido el placer de comer ramen en Japón te vuelves más exigente sin embargo es entendible ya que el sazón lo tiene que adecuar al paladar Mexicano, creo que por eso el tonkotsu es más famoso aquí que el Shoyu o las demás variantes de caldo menos conocidas.

I do love Marafuku. It’s not local and there is probably better Ramen in town that I have not tried. But of the places I have tried they have the best chashu pork.

JY has been our go-to since we moved to San Antonio in oct 2020. When I saw it was closed, we actually teared up. Cuz everyone who worked there, including the owner, was extremely nice. I loved their Tokyo Miso ramen with bamboo shoots, and my husband liked the spicy Tokyo miso with extra egg and an extra side of noodles.

It is not just the food cost (but that is a factor), the rent, the tables, the refrigerator, the property/employee insurance, plus the cost of paying USA workers living wages. There are a lot of expenses into running a business.

By far and away #1 of anything I've tried here. Reader, if you have not been here yet, you are doing yourself a MAJOR disfavor. Insane broth flavor and the BEST thick and chewy noodles.
Nishiki is #2 for me. I'd like to believe other posts here and try them all but almost every time I try another ramen place I'm disappointed compared to Hironori.
