In DS3 I found a pretty cute and nice looking "Dark Witch" fashion that made use of pieces from vastly different sets (slave knight legs, black leather body armor, Karlahs gloves, and a witchy looking hat)

A seemingly simple question, but not frequently explored since most build discussion centers around weapons, spells, and talismans, with armor mostly as an afterthought or whatever fits within your weight budget. This post will attempt to answer that question, and provide some recommendations for which armor sets to run.

Methodology
For this analysis, I considered full armor sets broken down into the following weight buckets:
All categories include <70% equip load to maintain medium roll, and 4 talismans at 0.5 weight each. You can also use equip load increasing talismans such as Erdtree Favor and Jar Talisman to stretch these weight categories. To use a Colossal weapon at base 8 Endurance, you'd basically have to use incomplete armor sets, or just go completely without armor.
To evaluate armor sets against each other, I developed a formula using the 13 armor stats (Physical, Strike, Slash, Pierce, Magic, Fire, Lightning, Holy, Immunity, Robustness, Focus, Vitality, Poise), normalized in each category to account for the different scales so that each stat is on an equal playing field, and given different weights to account for my perceived importance in each stat, being:
I will give at least two recommendations in each weight bucket, one for highest resilience within the bucket, and (more interestingly) one for highest resilience taking weight efficiency into account. As expected, the higher the weight category, the lower the efficiency as you sacrifice weight for more stats. Onto the armor recommendations!
Very Light (15 and below)
Starting off with the lightest category, my recommendations for Very Light armor sets are:

In this next category of Light armor sets, I have one clear strongest recommendation:

Honestly, anything except for the Royal Knight Set works in this weight category, and it'll all depend on how much Endurance you're willing to spend.

Tree sentinel armor as of current patch 1.08. There simplified it for the scrollers.
The Heavy armor category requires a significant chunk of Endurance investment. The Tree Sentinel Set weighs 45 on its own and would require at least 42 Endurance for a medium roll with a typical loadout. The armor isn't bad by any means, but I'd be hard pressed to argue that 42 Endurance is worth it when you could run something lighter like the Crucible Tree Set for much less runes investment
you only need 27end and great jar talisman. This default sweat armor.

Everywhere i look either it be on the web or on youtube, noone ever says what the best armor in the game is, they always judt say which ones are good.

If you really want the absolute best protection, the Bull Goat Armor Set from >!Patches !<has the highest defensive stats, but it's really heavy. So are the super-heavy armor like the Fire Prelate and Lionel's Armor.
If you want great protection that won't over-encumber you, go for Radahn's Lion Armor Set. It will last you for pretty much the entire game. The Veteran's Armor Set and Tree Sentinel Armor Set outperform it slightly, but are endgame armor.
For Helms, the ones that boost your stats are more valuable than straight-up pure defensive ones, especially if you're using magic. I personally go for the Witch's Glintstone Crown you get at the end of >!Sellen's !<questline. Others go for the Twinsage Glintstone Crown.
If you want to farm for it, and spec for item discovery, I recommend the Banished Knight Armor. Not the one that says (Altered), but one with a cape. It's a late game rare drop from the a single Banished Knight at >!Castle Sol!<, but it has the best overall stats for a chest piece. You have to farm the Knight that appears with two wolves, but you can't access this area until the endgame, and the enemies here are TOUGH.
Banished Knight Helmet (with Scarf) can be farmed as soon as you start the game. There is a single Banished Knight with it that spawns at the Cathedral of Dragon Communion (Caelid). He's literally almost touching the Site of Grace and he's the only enemy around. Super super easy farm. I also really like his shield and while it's not as good as Brass, it's definitely more fashionable.
You can farm the entire set from the early banished knight in stormviel(or dragon communion), and have boc "un-alter" the chest piece(which gives the cape back). Boc can actually "un-alter" all of the "altered" gear you find, but you have to get him the gold sewing kit and meet him at the capitol.
Not true with that set. Alternate must be farmed.
Good is subjective. If you have unlimited equip weight the Bull Goat armor has the highest physical resistances. Elden ring does really have linear progression with armor sets like other RPGS.
I think some good sets include a helm that gives you +stats on your main stat, or ones you need, and as much physical resistance as you can have without going to heavy weight.

Nope that's as high as it goes. I think its basically the equivalent to Havel's set in Dark Souls.
Sucks you can get locked out of it by missing a quest though.

No such thing in FromSoft games. Armour is situational. There are types better for some instances then for others. And no all round best to have. My suggestion? Just wear what looks good to you, express yourself.
Some of you may have seen my previous post on the best armor set in Elden Ring, and a few people have commented or DM'd since then asking for an update including the DLC armor sets as well, so here it is! All methodology will be the same as before, so check that post for full details; I did slightly tweak the category weights to make standard physical resist more impactful, which is the only change.
You'll notice that the new best armor sets, runner ups, and most efficient sets in every single category are from the DLC, which makes sense since newer, more late-game loot should be better, so try out some of the new armor!

So there you have it, the best armor sets in Elden Ring including the DLC! Same caveats as last time, such as not including passive effects or individual armor pieces, and others covered in the original post.
There is a very clear conclusion from this though: USE DLC ARMOR! Across the board in all weight and evaluation categories, DLC armor is just better than base game armor. Also a lot of the "special" lore armor sets are the best in their categories, which is cool as well. Have fun!
Is there a minimum poise lvl to hit? I’m wearing the rakshasa set I prefer the looks of the Jolan set (forgot the name) the thing with that set is that it’s 26 poise as compared with the Rakshasa which gives me 58
I have heard many attacks do 50 poise so having at least 51 is generally recommended

Yeah, some of the new armors are extremely worth using. Before I even entered the DLC, I knew I wanted to be a fat-roll build in heavy armor, but I was originally just going to go in with my usual heavy armor set -- imagine my surprise when, not even fifteen minutes into the DLC, I have myself a shiny new heavy armor set that rivals Bullgoat while looking much better.
Oh, another thing: read armor descriptions -- there are some armors, especially helms but a few chests too, that have additional effects.
Yeah, the Solitude Armor really checks all the boxes for me too, and I wanted to wait until I had (almost) beaten the DLC to make this so I wouldn't spoil myself, but turns out it's just one of the best overall armor sets right off the bat.
I read the armor descriptions for the lore, not the armor effects themselves. Highly recommend that as well!

Yeah the Solitude Armor is great. I like running the Black Knife armor with the gauntlets, helm and boots from the Solitude set. You’re silent while having rather good bulk, so it makes it really easy to slip by enemies you don’t want to fight or for getting to Graces or items while granting survivability.
You never got the veterans armor did you? I can’t wear solitude with a set being right next to it weighing so much less for almost equivalent gear statistically
What does the EFF mean?
Efficiency is the total armor value (AVG, which is a weighted normalized average of the other columns) divided by the weight. So how much armor value are you getting per pound

I'm new to souls like games, but I'm really liking Elden Ring. I have beated Godrick and I'm exploring the map, my next step is to enter in Raya Lucaria. That's not the point. I'm developing a build based on strength (I like to use great swords) but i haven't found any good armour... The best that i have is the armour that i spawned with... Any suggestions?

The Twin Maiden Husks at the Roundtable Hold sell the Knight Armour set.
To access the roundtable hold I believe you need to rest at two graces outside of Limgrave. If you've rested in Liurnia you can also use the sending gate behind the third church of Marika to get to the Bestial Sanctum in Caelid Dragonbarrow.
This! The whole set is a bit expensive for the beginning of the game (13.500 runes) but it's a great armor with 51 poise that will last you for a long time. With 15-20 endurance you can carry most weapons and still mid roll.
It's what I used for the vast majority of my first playthrough. I had real bad RNG on drops for the first 100ish hours.
The best armor is leveling vigor.
Tha scaled armor provides good protection and poise for relatively light weight. You can get it in the early midgame if I'm not mistaking. But really, armour is not too important. You want to have a poise of 51 (for pve) to be able to tank lighter hits while obtaining medium load. Apart from that just wear what you find to be the most appealing. Drip over stat!
Generally speaking, like the weapons the starting gear is almost always viable up until the lategame.

For my Death/Ghostflame build, I run the hood with Bandit everything else. I've tried mixing it up, but always fall back on at least the hood and Bandit chest.
I have to admit, the whole Set yells out Drip for me. Sometimes I try out different armours but this one's my favourite!
I’m glad I’m not the only one. I swap out the boots and gloves with more effective armor pieces, but I simply can’t bring myself to abandon the cape.

That's my favorite armor but recently I only use the chest piece because I use the raging wolf helm and the Bull Goat gauntlets and greaves. I won't be winning any fashion awards but it keeps protected/mid roll and looks good to me

I need help choosing the armor I’m gonna wear for most of the game. I’ve beaten the game >!(and gotten the secret ending)!< and I can’t decide on whether or not I want to go for a more protective armor like the Blackened set, or a more lightweight, mobility focused armor, like Eraden Clothes or sorcerer armor. I don’t use magic very much, and usually only use swords, body, and telekinesis. If you could share your opinion, it would be very appreciated!
I know this post is a little old, but I myself prefer to take advantage of the games localized damage. Lets say you have no chest piece on but you also have the blackened gauntlets or whatever they're called. If you block a sword strike with your arm so that it hits the gauntlet, that will mean you take much less damage than you would if you were hit in the torso where you're wearing nothing.
I specifically like to wear a plate chest piece, plate gauntlets, a plate helmet, and sorcerers everything else. However, since you said you don't like magic as much, I would recommend trying to wear lower tier armour in place of where I would use sorcerers gear to preserve your focus regen and mobility. Or, if you're feeling adventurous, you could wear nothing at all except for the chestplate, gauntlets, and helmet. A metal chestpiece is good because it's a huge target and therefore a large area protected, the gauntlets are good because you can block with them as a last resort (Or just to feel badass.) And the helmet it great for archers so you don't get one tapped by some fuckass guy way up on a cliff.
My final point is that if you have a sorcerers glove on your right hand and a metal gauntlet on your left, then spells charged in your right hand will charge faster. This may not apply to you as much but I find it very useful personally.
TLDR; Damage is localized, take advantage of it. Sacrifice protection for speed in certain places where you don't get hit as much. Wear a metal helmet.

IMO the Marauder Torso (Red Armor) looks more stylish with the Acolyte Cowl. Pair that with the blackened gauntlets and it looks pretty good.

I typically just use my sword and fist, with slow mo sometimes. And maybe some telekinesis if there’s a large group of enemies.
If you like getting close and personal then more protective armor might be your thing, just incase they manage to sneak a hit in there. Or you might take more mobility focused armor, so you can run circles around them.

I fiddled a lot with the 3 bis sets and I settled on max armour low magic resistance medium stance. Magic is brutal in the early game but when you get used to it it's really ridiculously easy to dodge.

I personally rock the Tempest helm, Suit of Rancor and Cloven Hose. It gives a decent overall protection and the drip combo is still pretty solid for our ugly jaws on female envoys.
