Achilles set is amazing, just got the helmet today at level 49, ran off to smoke the minotaur and now carry his weapon for the -1 overpower warrior attack so that's only 2 adrenaline.
So with speedy poison daggers I attack nonstop and fill up health and adrenaline so fast (let's me use the overpower attack for 2 bars), the combo is unstoppable so far! I legit feel like Achilles.

I’m assuming your talking about stats. Look up a video on how to effectively get good stat armor and you really only need 1 full good set of armor. Ofc you should almost always focus on your resilience stat.
Now for good looking armor, if you haven’t been playing for that long and don’t have much I think the Crota’s End armor is sick looking. In order to u lick the transmogrification so you can put it in any piece of armor you’ll need to complete quests from ada-1 to get the loom stuff to deposit in the tower.

Just beat the game, absolutely amazing story and im starting to do side missions and realm tears but I don't know what the best armor set/combo would be with strength defense and the others counted for (or even just strength or something) just to not make it a huge struggle with like level 7 enemies. Does anyone know what would be the best armor and how to get it?

There’s some “objectively” good ones tho:
fate breaker arms and waist with ares chest I think is a good legacy build set. You constantly get rage boosts and you gain more of it.
combining radiant arms and waist with the bear cape gives you extra dodge frames, slow down on dodge, and shoots bifrost arrows
a good charm interaction I love is the one where hitting stunned enemies creates shockwaves, and then pair that with the nidevellir arms and waist for max time they stay stunned.
combining Zeus and berserker set is probably as high damage as it gets, but Zeus is an easier set and forget.
Well I feel like my ideal play style would be like a glass cannon, as in I like doing high damage, but not have the best defense, because I usually block and roll more than just tanking hits (which I feel most people do) but I wouldn't mind having lower defense but if there's one that's good defense and strength that would be good too

The Radiance gives you a time warp on last minute evade and Berserker deals insane damage in a time warp, plus Belt ofZeus ups the damage of it all. Very vulnerable to damage sustained though.
Boring answer. There is no objective best armor as there are too many factors to consider. The better armor set is the one you can comfortably utilize to its full potential.
Lunda set is terrible if you never bother to go barehanded to build up poison. The “increase damage based on rage available” armor is terrible if you like to spam the whole rage bar 5 seconds into a fight. These are the two common mistakes I tend to see a lot from players. Meanwhile, the starting survival set gives a ton of every stats but no perk.
You see where I’m going with this? Basically what you should do is keep reflecting on yourself how well you can utilize each perks, because anytime you can’t, there’s something better. This also applies to enchantment set bonus. There are the “free” ones like more stun damage or more damage on status enemies (you can easily apply sonic/hex status with companion’s arrow) but there are the harder to use ones like perfect dodge, or low/high health ones.
You say you like glass cannon, but how far are you willing to go down that path? Berserker chest piece is an obvious one, having a perk that make you take more but also do more damage after using relic. But then there’s also difficulty layer to consider. Is one hit kill acceptable? You can also even set up your HP to be lower than 50% to always activate the Helheim enchantment set for even more disgusting damage.
All in all though, don’t be afraid to go experiment. Ragnarok actually gives you so much resources that you can max out like 5 whole different sets of gears with just naturally going for 100% and almost no grinding, it’s a ton more generous than previous game.

EDIT: I realize now that you probably haven't gone through NG+ yet. The stronger armor builds (such as Zeus's and Ares' armor) can be unlocked after a second playthrough, but I would highly recommend finishing your first one. Honestly, fully stacked Survival armor gives the best overall balanced stats and should get you through, at least until you get through the Berserkers
I would do the DLC, the Sparta set has the highest strength stats in the game. Does pretty much the same damage as the glass cannon Zeus build, but with much higher health and defense.

That is correct, but I'll leave it there for you to enjoy. I also forgot to mention my favorite set. It's Steinbjorn's armor with the Svartalfheim enchantment set and all the stun effects, but it's the exact opposite of glass cannon lol. I will also second the Lunda's armor mentioned earlier. That and Steinbjorn are easy mode.

Best stats actually at the cost of no unique effect but it boosts every stat on every piece, my personal favorite as I let my whole rest of my kit define my play style, I love using the spear to siphon elements and I run a stun build so the spear with sonic handle shreds

Not really a spoiler. Once an armor piece hits level 9, max level, you can transmog it into any other armor piece of the same type you've acquired.
Also forgot to mention, certain armor pieces have different appearances at different levels. You can only transmog to the specific armor appearances you have unlocked. So for example, if the Berserker chest piece has a different appearance from level 6 onwards, you can only transmog a different level 9 chest piece into the whatever "versions" of the Berserker chest piece you have unlocked. If your berserker chest piece is level 3, you can't transmog something into the new appearance unlocked at level 6+. Hope that makes sense.
I can't give you a top five because I love all of them, but the ones that always come to my mind are the throne watcher set, the mastodon set, throne defender set and the bone king set.

B-01 aside, the PH-56 Jaguar with Guerilla Gorilla helmet has really grown on me. At first I just didn't like it, but after running it on Earth, since an MG never left my hands, it's become one of my favorites. The look is cool, and the passive is pretty damn great.

What builds are strong right now? Especially for the daggers — nothing seems to be working in my runs like it used to.
I mean I love daggers with Hestia. The quick Scorch stacking is awesome. And for aspects I like the parry one a lot.
Try scorch on attack, freeze on special and glamor gain. Freezer burn + burning desire is really good. Or you can try the ol' reliable Pan aspect with Poseidon special

Yeah daggers kinda put in a bad spot. Aspect of Pan + Poseidon special got nerfed so now aspect of Pan + Hestia is the way but Hestia also got nerfed. Aspect of Artemis is alright but not great imo, same for aspect of Melinoë.
The new hidden aspect for daggers is amazing, I consider it the strongest weapon in the game right now (at least one of the strongest, objectively) but it’s a hidden aspect so not everyone has access.

Unfortunately, I don’t think daggers outside of the hidden aspect are in an especially great place. Probably the worst position imo. For anything, I guess going for trick knives is good. Pan still kinda works with Poseidon or Hestia on the special but it does rely on good duo boons a ton. My hot take is that Artemis is probably the worst aspect at the moment, although that’s mostly because I’ve come around to thinking the hidden coat aspect is a bit better than first thought.
