I can tell you main bosses. Any 2 shardbearers out of the 5 accesible at the start of the game (godrick, renalla, mohg, rykard, Radahn)(mohg and rykard are extremely high level though), 2. Draconic tree sentinel 3. Godfrey ghost. 4 Godrott. 5 Fire giant. 6 god skin duo 7. Maliketh 8. Real Godfrey/ horah loux. 9. Final boss. This is the bare bones fastest route though the game. This doesn’t account for mini bosses in respective dungeons and bosses to get items that are needed to go on this route.

Note about 6) godskin duo, I cannot be 100% sure, as that area is such a mess, but I think I stumbled my way to a skip. First time I entered that boss-fight, I did not enter from the nearby grace, I entered it from the other side, meaning, you could probably navigate yourself to the next area without actually beating them.
I am a beginner. So far i defeated the watchdog, beastman, patches, stonedigger troll, the guy on a boat that summons skeletons, and a dragon next to the gatefront ruins. These bosses don't seem to respawn even after i rest at the site of grace.

But if you wanna farm runes, look up the bird farm.
If you just wanna redo the bosses, then you can do that after you have completed the game you can do NG+ that lets you keep your gear and levels and fight each boss again.
Lords of the fallen has a game mode at their lamp shrines called Echoes of Battle, and lets you fight each remembrance boss again for fun. No rewards, no progression, no items lost if you die. Just straight boss rematch’s. Elden Ring could learn from that I think.

My personal favorite was the fight against Lienvir, Herald of Vigilance. I enjoyed the light stealth and surprise attack mechanics with the tall grass portion of the second phase.

Yeah, it’s optional and not really accessible till late game when you have all three sigil moonstones. Make your way back to the Runic Lake area and place the corresponding stones on the correct pedestals scattered throughout. You might remember them because until you have all three stones you simply get a “You cannot interact” message when approaching them. Once they are l in place, Lievnir rises from the lake and the fight is initiated.
Be careful though: if you place the wrong stones on the wrong pedestals, you can lock yourself out of the fight.
Yeah, the fact that he doesn't have to tap to attack really forces you to rethink your strategy.

There are 43 total boss encounters in the dlc that have a red bar at the bottom of the screen. Here is a list of them all for anyone trying to figure out what bosses they still need to do.
The bosses I have listed as main bosses are the ones that are required to beat the dlc, or they give you a remembrance. I’m also including Bayle as a main boss since the heart he drops is basically a remembrance. The only main boss of the 12 listed that doesn’t give you a remembrance is needle knight. There are a few repeat bosses, which I’m also including towards the total boss count of 43. If I’m missing any let me know.
I think it's 42 and not 41. Mainly because you can confuse the tree sentinel boss as a duo, however they are technically 2 separate bosses as when you kill one it says "enemy felled" and you can rest or travel away and it won't respawn if you haven't killed the other one. This is not like the tree sentinel duo boss outside the capital where if you kill one it doesn't say "enemy felled" and the one you kill will respawn if you haven't killed the other one yet.
This was a tough one for me, trust me. When u kill the first Tree Sentinel u get zero runes. When u kill the second, you receive all the runes. So for that reason, I think they should be a duo boss. It’s tough though, but I think the intention was for it to be a duo boss.
Why fromsoft didn't make it exactly like the other one, I don't know. For me personally, I consider the "enemy felled" and the fact that it won't respawn as the indicator that they're 2 separate bosses but your stance makes sense too. But you do get zero souls for killing Aldia in Ds2, but it's still it's own boss.

Methodology
Each boss page from the Elden Ring Nightreign wiki lists the boss’s stance/poise (how easy they are to stagger), whether they can be parried or critically hit, their damage types, negations (damage absorption percentages) and resistances to status effects, and the health and rune reward for each variant (night, field, castle, etc.). Recorded the solo‑play HP and rune rewards for each variant and calculated a simple rune‑efficiency metric (runes ÷ HP). A higher ratio means more runes earned per unit of health, i.e., better rewards relative to how long the fight lasts. Resistances, negations and stance values are summarised because they influence difficulty – bosses with high stance or high damage negations take longer to stagger or kill.

after i saw the table ..this in pratice means zero.
if you encountered whatever field boss..you do it
you lose much time ignoring it just because it is not efficient.
even the frosbite ruins since it appears to be most efficient is useless because no way you are going to make it a priority
No one said you should ignore the less efficient ones. This is just some factual data to do with as you see fit.
I for one appreciate knowing an estimate of what to expect if I’m planning on hitting X or Y boss on a given path. At least when you spot them from a distance but don’t plan to fight them right away, this might influence if I prioritize them or not.
It’s useful for rotten woods, especially in that chunk of the map where there’s 3 bosses sniffing each other’s farts, so you can pick which ones are worth it

You forgot to create hate meter column, for boss who can and will waste your time for 10 millions years by either running, flying away from you or doing moves you can do nothing about

Only reason I ask this is because I've been trying to kill him for an hour now, and have yet to get him below a quarter of his health.
The Rotten, since a bonfire is right beside the boss and you can easily use bonfire ascetics to farm. It's also the one of the only bosses that are accessible without fighting other bosses on new game plus.
This one is pretty good, I will agree. It will give you a large amount of souls every time, only having to beat 1 enemy which is the boss of the area. Be warned though after ng+1 it can get really hard to beat him without getting pretty sweaty.
First, u/BIobertson asks a reasonable question. DS2 is an unusual game in the sense that a few levels make very little difference. DS2 is never like (for instance) the early part of Elden Ring (which can definitely be overpowered with stats)
That said, if you want a farming spot that offers a decent rate of return:
a) Purchase Soul Appease
b) Infuse the Priest's Chime with Lightning and upgrade it to +6
c) Respec do that you can cast Soul Appease
d) Join the Company of Champions (don't forget to quit when you're done. This is literal hard mode)
d) Use a bunch of ascetics in Straid's Cell.
The idea is simple. Walk to the middle of the room (Soul Appease projects a circle that does tremendous damage to hollow and nothing to others, so it won't affect Straid.
You can easily get 2 million souls an hour (once you get the positioning down you can clear the room several times a minute) on NG+7
I suggest this because while the Rotten gives better return per ascetic, if you're struggling with Giant Lord, Rotten on higher NG settings won't be a lock. And you're limited by the number of ascetics you have. Straid's Cell doesn't require an ascetic for every run.
Totally safe as you won't aggro the exploders or hurt Straid. Stand up, walk a few steps, blast, rest. repeat.
Side bonus: A decent collection of Alluring Skulls.
Farming the rotten with ascetics
Rotten is the best route, if you want to finish NG+, and NG+2 (trophy hunter)
However Giant Lord method is more sustainable
Why do you want to farm souls?
Watch a video how to beat him with spells. This pretty much trivializes the fight as you only need to slowly walk 1 direction or the other.
You can try to beat rotten as he is the second best farm. However he's also probably a harder challenge high ng+ cycle and doesn't provide free bonfire Ascetics.
You can farm the blue sword mage guys [drops the sword catalyst] right before the fight with Vendrick.
A. Kill the 3 hollow that will keep ringing the bell as well as the syan knights and dragonrider
B. Kill the mage guys. Ring bell. Repeat infinitely with no reason to rest at a bonfire or burn ascetics. You get decent souls and useful drops.
So in an interview Miyazaki stated there will be over 10 new boss fights for the dlc. Am I the only one slightly worried about this number? Considering the base game had over 100 boss fights 10 seems really low for the 40 price tag. I’m hoping it’s 10 remembrance level bosses that we are getting.
This number doesn't include field and dungeon bosses i am sure of it. He also said the map will be much more packed with stuff and bigger than limgrave. Limgrave alone has way more bosses than 10. So it wouldn't really make sense if the DLC only has 10 bosses. It probably has 10 main bosses and a bunch of other bosses.

The most important thing of all: Miyazaki said at the Game Awards after winning "And we have even better things to come". Why doesn't anybody bring that up. He has all the statistics behind him. And a humble man doesnt say that without being sure. I am sure the bosses will bring quality.
well on the trailer we see minimum 4 new large bosses, also maybe some hidden final boss (from never show the final boss on his trailers so maybe Messmer isn't the final boss of the dlc, malenia was the main boss of promotions and trailers and on the final game she was a optional boss, very important to lore but not the final boss of the game) also we see like 2 or maybe 3 small bosses (the spikes hypo and the skeleton on a horse). Maybe those are the ones that are used for small dungeons, caves and mines (if there are on the dlc) and the legacy dungeons have large bosses on it. Idk only a theory.
The cover boss in Souls DLCs have never been the final boss, its a running theme. So we can almost gurantee that Messmer wont be the last boss, probably in the somewhere in the middle?

I’m really hoping it’s 10 main bosses as that would be amazing. Mini bosses were everywhere in Elden ring so I fear we would only get maybe 3-4 tops main bosses like some other souls games dlc’s which was totally fine for those games. This is Elden ring dlc though so I’m expecting it to be a bit chunkier in terms of boss size as it’s $40 and a rather large expansion with 40-50 hours of gameplay if I’m not mistaken. If I remember right, it's 10 unique bosses but not all of them are mandatory to finish the DLC but also there are some mini bosses.

There are ten remembrance bosses. For comparison there are 15 remembrance bosses in the base game.
