So I'm running close to lvl 200 I've used the red hand long sword for majority of the game along with the whispering hollow shield
my stats are currenly pretty evened out. Strength and Agility are somewhere around 35 Vitality and Endurance around 50 both Radiance on 40 and I am leveling inferno up

I think you are spreading yourself too thin with your offensive stats being only around 30-40. Ideally, by level 100, you’d want your main offense stat to be at or near its hard cap (i.e. 75). Here you’re at level 200, and neither of those are at 50 (soft cap) yet.
That being said, there are good weapons that scale equally across 4 offense stats. One that comes to mind is Rosamund’s Sword. Not sure how the mixed scaling would compare to say, a pure Agi sword at A+ scaling when you have maxed at 75.
I'm having the best time using Long Sword + Grand Sword.
Swapping between two-handing the long sword or pulling the Grand Sword offers some great variety in strikes and speed for any given situation while doing plenty of damage either way.
I'm a huge fan of sword and board, the shortswords have excellent combos and still have a big enough parry window. That being said, I've no problem with any of the weapons. All have advantages and disadvantages. The big bonks are fun too, just find something that feels right and get some practice.
Crimson Rector sword and shield is a godly sword and board combo. You can grab them super early and just level strength the whole way for a super simple build.

great curved swords are really fun. anything with multi hit r2s is great with axe talisman and endure. messmer soldier spear, spiked caestus. axe of godfrey can hit really hard with the right talisman setup since the dlc. hell, even godrick’s big axe is good now and it’s ash of war is nuts.
having a dagger with hoarah loux’s earthshaker is a good one to have handy in the clutch. also maybe something like a cleanrot knight sword with bloodhound step available for swap. if you have 15 faith for gfms, it does really well on strength build with fire attunement, or with fire grease on heavy.
Usually any weapons you felt comfortable with for PvE can work for PvP if you have the right ashes or know its moveset well, crouch R1 with Zwei can work as does its heavy attack. STR versions (usually the shortest weapons) out of any weapon class are worth trying with Heavy affinity and two-handing at that STR level, mix-ups are the best way to catch foes off-guard and Greatswords are always a great choice. DLC has a ton of great weapons options like any you have found, and anything you can slap heavy affinity on will work. Fire affinity works for the Fire Knight Greatsword if you got one along with the Messmer knight ashes, I prefer the Skewer over the Spear personally for countering a lot of shit and roll catching to boot, both are good. Also great on pure FTH builds.
Generally you want something with knockdown or something with a big area of effect to catch squads, Waves of Darkness and Blackflame Tornado are nice on big weapons. Something for roll catch with your weapon class or ash of war, the more mobility on the attack the better for PvP. Some thrusting weapon/attack to catch runners, ranged options for harass, potentially kills if you git gud with hefty rock pots which are great for STR builds if you have the round rocks for them. You can also get into parry tools, Carian Retaliation is the best parry to bring generally but if they're smart they'll expect it if you bring a shield in hand, so soft or hardswapping into parry shield can be a good trick.

That being said, still some weapons are indeed better than others.

Cinquedea with a shield like Blue gold kite and guard counters or running attacks might be fun.
Axe of Godfrey hits like a truck if you're into that thing.
Freyjas greatsword has a great moveset you can have loads of fun with.
Banished Knight Greatsword and Sword Lance have sweet true combos in their moveset and do well in Cold infusions.
I‘ve been rocking this build for a while now, even in the DLC lately. It is absolutely insane how much damage this little thing does. The AR climbs way above 1k bc of the Talismans on consecutive attacks.
The crystal tears I use are Thorny Cracked Tear and Holy-Shrouding Cracked Tear. I use it together with Golden Vow and FGMS on bigger enemies. For most enemies Sacred Blade should be enough.
You can switch to Flame Art against Bosses with high Holy-Resistance. Gameplay-Wise this is a very satisfying build. You can sneak around bc of the Armor and backstab enemies. You can use a variety of spells. The build isn’t stat-hungry at all, you just pump your points into FTH and VIG. The moveset of the Erdsteel Dagger is amazing, the uncharged heavy hits twice, so the Talismans activate early. You will find more openings in boss fights with an aggressive playstyle. The running heavy has good range and the normal heavy moves you forward quite a bit and has decent tracking.
It is absolutely devastating how much DMG critical attacks deal after activating all the buffs. You can stance-break bigger enemies with a Coded Sword on the second hand since it deals 36 stance damage. I admit, breaking stances isn’t easy with this build, but when it happens, it’s over. It’s sometimes frustrating when attacks are missing against bigger enemies like Dragons or Erdtree Avatars. In that case, you can simply use Spells, the Sacred Blade projectile or switch to your Coded Sword.
Fighting against undead enemies almost feels like cheating, lol.

I use the Scaled Armor Set and switched the Chest Piece with the Black Knife Armor. It looks truly awesome and I‘m over 51 poise as well, offering good protection with little END investment.
is 51 poise needed or 50? I heard enemies do 50 / 100 / etc poise damage so does that mean 50 will block the light attacks or does it need to be 51

Late to the post. I ended up using this weapon to beat the final boss in the DLC and I finally did (it was still hard). It's really funny how much I disregarded this weapon when I got it, so early and so unassuming. Coming back to it made me appreciate it.
Edit: The AoW of Coded Sword deals 36 stance damage. I‘m aware you can optimize this build even more, for example with a second Erdsteel Dagger or Armor that boosts FTH. I use this Armor for Fashion Purposes and one Dagger for simplicity. I recommend Prophet as a Starting Class. Don’t forget to switch to the Erdtree Seal when hitting 66+ FTH.
Best weapons are torches and best talisman is either Daedicar's Woe, either Scarseal, and any Scorpion's Charm.

I don't get it, honestly. The dudes videos aren't edited at all, so half of the video winds up being filler while he waits for an invasion or what have you. I don't mind long form content, but when it's literally just filler and rehashing the same stuff it gets a little irritating.

For invasion play it's your decision-making that really matters, crazy pvp skill is secondary. Map knowledge is also massive in some areas. This has always been the case but it's seriously magnified in ER where it's often a 1v3.
Get on one of the invasion subs for build ideas but honestly you'd be better just picking something bread and butter like a claymore and concentrating on decision-making, and analyse why you died. It's probably the following:

I've been playing PvE for awhile and can hold my own even in high level areas no problem but I jumped into PvP recently and with that same build I got laughably wrecked. I use bow/longsword with 100 strength 130 health rest in dexterity currently just over 300 What am I missing or what would be a better combo to at least be competitive in PvP.
SnS and Bow isn’t a PvP build. I’d say get on Google and YouTube. PvP at this point will be very pinpointed on strengths vs weaknesses and that setup you have will not be competitive. If you have Qs, let us know, but I’d say get on Google first.
Bow is hard to master and needs to be with a Dex weapon like Spear or Rapier (I know it’s Int) but still. Sword is great but not with bow.

Those two weapons don't really have a natural synergy in PVP in my opinion. I would either focus on range and do bow + lifetaker or focus on melee and do SnS and GS. Lifetaker buffs the bow and has a lot of utility that can be used. SnS provides a ton of survivability and gap-closing utility.
You would also want to think about perks on your armor. Refreshing for example is good for PvE but not as helpful in PvP. In PvP you would want to use something like tumblers and build around those. Have as many enchanted ward perks as you can, include a couple of freedoms, and then some conditioning for slash and fire.
PvP can get very expensive because it's difficult to get good 3 perk armor pieces. Expect to pay 75k+ on the tp or 125k+ using gorgon essence to craft.

Waves of Darkness trashes everything. Knocks down flyers, high poise, AoE, multi-hit, follow-up attack, hits like a monster truck.
Chilling Mist is my most used AoW. I just throw it on a dagger and I got a quick and easy way to frostbite everything.
Storm Blade is my workhorse AoW. Good ranged option and it shreds when up close.
Ruins Greatsword. It stuns and has range. RG go BOOM
Near - Reduvia
Mid-range - Thunderbolt on a Keen Great Epee
Far - Death ritual Spear or Sacred Great Stars with Golden Land

Well answers for both is the greatsword and Lions claw and Dark Moon Greatsword with its Moonlight Greatsword skills.

Death Ritual Spear for a general heavy hitting ranged option on big targets.
Mohgwyn's Sacred Spear for, well, almost everything really. Especially good for crowd control.
I love the eleonora poleblade and godskin peeler. You can just spam the skills and win.

I’ve done all the min/max testing on a Strength/Faith build. Electrify armament on a Heavy infusion is ONLY good for the late game bosses in the base game. Infusing with either Flame Art or Holy far out-damages Electrify Armament for most enemies in most of the game

Yeah, Star Fists with endure are what I bring out to kill bosses that are too hard or too fast. They’re good for general PVE too

Depends on your stats split, but you'd really do better with more Str and going Heavy then using your grease or spell buff of choice to add elemental damage.
P.S. Lightning is way better.

Lightning damage is just the best damage because it’s the least resisted by most enemies, while also being more effective against a lot of late game bosses
Yeah, Heavy is going to scale the best with Str, and you are no doubt two handing these so you get that bonus 50% Str.
That will get you more overall damage, and the grease or weapon buff spell just adds some more spice.
Lightning is best because, like the other dude said, it is least resisted and buffed in wet conditions. Fire is debuffed in wet conditions and resisted more with higher Vigor (for pvp).
You'll have more raw Physical damage with Heavy and high Str (for these weapons). Adding a lightning buff is simply going to add more damage to the physical, so who cares how it scales.
Also, splitting damage with affinities like Flame Art or Fire or whatever is generally less effective than going all in on physical damage and adding a little sauce on top with your favorite weapon glow.
That all said, Dex/Fth with Keen + lightning does also slap hard. I simply wouldn't do that with Greatsword or Rusty Anchor.
What are your stats? If you have around 40+ in STR then I think you would be better going heavy and then applying electrify armament.
I have split stats rn 40 strength 40 faith but I plan on speccing a little more into faith then strength when the build is done just for more incant access

You look like you want the FIRE Knights Greatsword from the dlc, unfortunately you need to farm from fire knights in shadow keep but you get some excellent new fire art ashes of war from there too and that thing slaps! Highly recommend, the sword has a good moveset too!
