I've watched through Naruto 4 times, including OG and Shipudden, I haven't seen a single episode from those last 3 seasons of OG Naruto lol.
Some of the filler in Shipudden you should definitely watch; the main two being Kakashi's backstory and Itachi's backstory.

So I just skipped episodes 57-71 of naruto shippuden and the filler guide says episode 72 is completely manga canon which can’t be true because naruto and sai are in hospital I’m guessing because of the filler mission which is kindve confusing me on what I should interpret as canon. Kakashi ANBU arc is filler. The Manga doesn’t expand on his experience in the ANBU besides protecting Kushina. In canon, Danzo never tried to assasinate Hiruzen

Recently, I decided to revisit the whole Naruto anime. Back then I was watching some episodes here and there but was never fully invested. Then I just read the manga up until the end of Shippuden. Only Naruto the last movie is canon, you can skip the rest and as for fillers, you can skip everything except Episode 347-361, it maybe a filler but it perfectly tells story of Kakashi and Akatsuki.
