Iām mostly looking for compelling stories with well developed characters. Not a fan of romance, but I donāt mind it as a subplot. I love complex characters maybe with a painful past or on their way to redemption. Just a huge fan of character development.
Iāve heard good things about Inuyasha so I added it to my list. I had also started watching Bleach but Iām not exactly in the mood for an anime with many seasons.
So far, Iāve only watched (and loved) Demon Slayer, My Hero Academia and Jujutsu Kaisen.
Iāve also watched anime movies such as Miyazakiās and others.

Vinland Saga
Haikyuu, definitely watch Haikyuu. Might not be what you're looking for exactly because it's a sports anime so you might think there's not really a plot or meaningful character development, but it definitely deserves at least a chance. The characters are super well written, even the most insignificant side characters get development and there's so many different types of characters too, anyone can find someone they relate to. And so many different perspectives and life lessons, plus the music is amazing and the games are exciting. I've rewatched it at least 15 times by now, it's just so damn good every time. (It's 4 seasons + 2 upcoming movies though so might be a bit long if you're looking for something shorter... But it's definitely not as long as Bleach though.)
Then of course there's Attack on Titan, one of the best shows I've seen in my life, with a lot of incredible characters. There's a lot of character development, both positive and negative. If you love complex characters, this one's for you. And the story is incredible too, there's an insane amount of foreshadowing and if you like mysteries then you'll love this, you'll definitely get sucked in after the first episode. The music is also a huge bonus, it's the best I've heard in any media. (This one also might be a bit long, it's 4 seasons + 2 movies just like Haikyuu but this one's finished already.)
Sousou no Frieren is also amazing, just good vibes and wholesomeness with great characters and development, can't recommend it enough. This one's just 25 episodes so far and I believe there'll be a few more until the season is over.
There's also Monster that has a lot of interesting and complex characters and a cool story, it's around 75 episodes I think and it's kind of a slow burn, at least at the beginning, don't know if you're into that...
Link Click technically isn't an anime, it's a Chinese series, but it also has some really good characters and a very compelling story. It's 2 seasons, I think it's only around 25 episodes in total.

I mean...that's very subjective, but Fruits Basket (2019) has some of the best characterization I've seen in an anime. Don't be fooled by it - it gets extremely dark in parts.
Some examples of good character development in my opinion are: Itadori(jjk), Jojo(jojos bizarre adventure), Light Yagami(deathnote), Mob(Mob psycho 100) and Shirou Emiya(Fate/Stay Night).
An example of bad character development in my opinion is: Sakura(wind breaker)
Something where the mc has to overcome a strong challenge. I think my favorite scene that develops a character is in demon slayer where he cuts the big rock.
mushoku tensei jobless reincarnation is a phenomenal anime I would highly recommend it's an iseikai where the MC has to grow out of his fears/ problems from his old life (and the side characters have so amazing growth as well)
I second this. The MC is a sick awful person in his past life and he grows and changes and develops so much and and the world building is very well written and the mc isnt the onky person getting developed / maturing. Amazing show.

I really love shows in which the characters start out in one way but over the course of the series their personality or outlook on things changes, it's one of the reasons why I like coming of age shows because the growth and development of characters is quite noticeable. Is there any anime which has these aspects of good growth and development throughout the show?

And oda is introducing new characters with every chapter, its really incredible.

Youāve probably seen it but Hunter x Hunter has amazing character development in the antagonist of the Chimera Ant arc.

Looking for vibes similar to NGE, Code Geass, Vinland Saga, Legend of the Galactic Heroes, Banana Fish, FMA, and Cowboy Bebop.
In all these shows MC is motivated with a singular narrow-minded goal. As the story progresses, so do the characters and they evolve from having a simple goal (revenge/validation/power) to a greater appreciation for life and itās struggles. Iām an avid watcher however and feel Iāve already watched the good stuff. Also not really into the romance genre.

I rewatched the series because of the new season, and so I have a different view on a main character I once considered to "hate". Stripped away the novelty of the series, its clear to see how Koyomi unironically grows up
Of course he has to take responsibility for his actions in Owari which is a major step in his maturity, but I still considered him to mostly be a delinquent
Seeing University Araragi vs Kizu Araragi really highlighted how much growth the character really had over a very long and slow journey

FINALLY!! Yes, to me Araragi is bar none the most well written and nuanced character in the story and I have written pages and pages of analysis for him that I aim to make into a video script. Bottom line is that there is a reason most arcs in the series are narrated by him.

I've only managed to analyze Araragi pre kizumono, during Kizumono, and a little during Neko Kuro. I decided that since there is so much to dive into in regards to Araragi, it would be best to analyze him and the ways he changes in chronological order throughout the story. Since its been a hot minute since that rewatch imma need to do an analytical rewatch so I can get my notes down for all the characters. I also have sections on Kaiki, Shinobu, Hanekawa, Ougi, Sodachi, Deathtopia, and Gaen, completed to varying degrees if you're interested.
Underrated? I think people mostly agree that his character development is amazing, if not the best in the series (though I prefer Hanekawa and Nadeko's arcs).

That became really clear to me during the final season, everything was setting up for Araragi's growth at the end of owari, its just so well written. I had to look back at the series as a whole after owari and it changed my view on so much, mainly because Araragi throughout Bake and 2nd season had his character shown on the sidelines while highlighting the characters of the other Monogatari girls, so i never thought he would have gotten perhaps my favorite character arc in the monogatari series

Have you watched Shingurui before? The anime only adapted half of the manga's content. Its story center around two samurai, their characters probably didn't "develop" much, but through the story we get to understand them better (I think the female protagonist has more character development). A very gore and violent anime/manga, highly recommend though.
Edit: just to clarify what I meant protagonists have little character development. The theme of the manga is using a story to convey their contrast personality/idealogy, so imo their characters develop very little in that aspect. But they get to experience a lot of wild stuff and able to keep my interest throughout the whole read.

Fujiki goes from uncertain and humble to focused and ...confident, I guess. Then to obsessed with vengeance.
Irako goes from arrogant and prideful to a sneaking...not sure what you'd call him in the middle...to a one man army out for vengeance.
And then there is what happened to Mie and Iku.
Vinland Saga is a grand masterpiece of character.
Planetes is the author's previous work that is smaller in scope but still achieves insane results.
He really is amazing at telling stories where characters seek and find true change of self.
And don't forget the manga continuation. One of the best things I've watched/read.

Really good. It is a little bit lower on the large ace pilot action, and focuses more on a Zeon pilot on a spy mission to try to stop the main character from the original series from getting a new prototype Gundam, and some random kid decides to come along and gets PTSD. The ending is really sad.
War in the pocket is an OVA. If you donāt mind not having all the background lore, it will still be fun. And bc itās Gundam, character development still slaps.
Every protagonist in the original 3 Gundam series. Between Amuro, Kamille and Judau - you experience PEAK character development in all of anime.
But itās Gundam, so unless youāre ready for some heavy ass dialogue, a lot of world building and lots of thinking - then donāt bother lol

For instance, I adored Violet Evergarden, Your Lie in April, and Clannad: After Story. Long after I finished watching them, these shows continued to have an emotional impact on me. Just something with genuine emotional weight, character development, and powerful storytelling is what I'm searching for, not necessarily pure romance.
As long as the characters feel genuine and change over the course of the series, slice-of-life, drama, psychological, or even fantasy works. If at all possible, I would like very little fan service.
