I usually use the software ShareX for screen capture or recording. Your laptop's GPU or the Windows Xbox app may also have software for screen recording.
You'll want to edit the clips to just be the parts you want. You might be able to do it in something like Windows Clipchamp though I've never used that. I typically use Davinci Resolve for any video editing I do but it might be overly complicated to start out.

Yes, it can be transferred to an external drive to save space on the laptop. Open File Explorer and go to Videos > Captures and that is where all the screen recording saved. Sure, you can even live record to an external device. You can change the recording options, resolution, codec and whatnot to sacrifice some quality for lower space requirements if needed. Lots of guides online.
Many collaboration softwares have built in recording too, assuming you're using one for the call.

Start+Shift+R brings up the Snipping Tool in recording mode. You can select an area and record, with your choice of having computer sounds on or off and having microphone record or not.
I will say that OBS is a very nice tool that is easier to use than it looks, so if you are doing serious recording stuff, you might want to learn it. It's not as scary as it looks.

If you're using Windows 11, check out the Snipping Tool, a built-in screen recording tool. I personally find it way more straightforward than Xbox Game Bar.
If you're still on Windows 10, Snipping Tool doesn’t support recording yet. In that case, I’d recommend trying EaseUS RecExperts. It's super easy to use, much simpler than OBS, and still has all the features you’d need for recording browser tutorials or any non-gaming stuff.

The LOQ is a solid laptop, good build quality and thermal management. As far as how it'll do for playing the Sims and watching movies it will do great, its more than enough for both tasks. I would just add another 8gb stick of ram so you have 16gb.
Just mind you that the 2050 is already an aging gpu, especially the mobile version. So if you ever plan on playing far more graphically intensive games like more recent triple A games you will find it struggling.

Thinkpad is basically Peak-Lenovo. But the Thinkbook 16p is not far behind quality wise.
P1 is a great system pricey, but great.
Why lenovo only? Also try buying anything from store only... This is out of my own experience I am telling.
